Position Summary: Assists Executive Pastry Chef in daily operations for pastry production of the entire Stein Collection, including the Forbes Five-Star rated Stein Eriksen Lodge, the Chateaux Deer Valley, and the Stein Eriksen Residences. Develops and implements menus for six separate outlets, coordinates banquet production and execution, and assists with cake, chocolate, bread and amenity programs. Creates innovative, trendy and luxury pastries, amenities, showpieces and wedding cakes to provide exceptional experiences for our guests.

Requirements

  • Culinary school graduate or equivalent experience.
  • 3+ years supervisory or managerial experience in a pastry position.
  • 2+ years experience with at least 2 of the following: wedding cakes, chocolate production, bread/viennoiserie, plated desserts or high-volume banquet production.
  • Ability to clearly communicate via written and verbal formats with stakeholders of varying levels in differing departments using necessary organizational tools.

Responsibilities

  • Create and oversee production of items of the highest quality
  • Ensure guest satisfaction and consistency through fully developed recipes.
  • Utilize knowledge and experience to incorporate seasonally relevant ingredients and techniques to create approachable and appealing amenities, plated desserts and banquets.
  • Lead and mentor team members in upholding standards, including Forbes ratings, and compliance with all company policies and procedures.
  • Assist with scheduling and monitoring daily labor to meet expected goals.
  • Assist with ordering, inventorying and recipe costing to manage food cost.
  • Oversee setup, operation, breakdown and cleaning of kitchen daily.
  • Availability to work holidays, weekends, nights and special events.
