At Fiddler's Elbow, our mission is not only to, "Enhance the lives of our Members & Guests with WOW moments they can't live without," but to also enhance and enrich the lives of our Fiddler's Family members Pastry Externship Program This program rotates through three areas of the Pastry Department, with a total of 90 hours of experience. Externs will be under the direct supervision of the Executive Pastry Chef and will conform to the standards and practices of Fiddler’s Elbow Country Club. The extern will be responsible for the cleanliness, sanitation and organization of their work areas at all times, as well as cleaning and clearing their area at the end of their shift. Particular attention is paid to: -Proper storage of all items with regards to correct containers, temperature zones, labelling and dating of all items -Working in an efficient manner, and completing tasks as quickly as possible -Following recipes and procedures as laid out by the Chef -Punctuality and communication with the Chef -Maintaining a professional appearance and demeanor while on Fiddler’s Elbow property Area 1: Banquet Dessert Prep (~30 hours) Assist the Pastry Department in the production and presentation of desserts, entremets, occasion cakes, breakfast items, and petit fours for banquet events. These hours will be distributed throughout the week (Monday through Sunday), as determined by the Executive Pastry Chef, with consideration for the needs of the Department and the availability of the extern. Area 2: Restaurant Dessert Prep (~30 hours) Assist the Pastry Department in the production of desserts, entremets, ice creams/sorbets, and petit fours for the Club’s fine and casual dining outlets. These hours will be distributed throughout the week (Monday through Sunday), as determined by the Executive Pastry Chef, with consideration for the needs of the Department and the availability of the extern. Area 3: Restaurant Dessert Service (~30 hours) Assist in the fine dining Elbow Room with preparing, plating and serving composed desserts for the evening service period, with the additional guidance of the restaurant Chef de Cuisine. The extern will also assist the Garde Manger cook with plating during peak periods. The Elbow Room is open for service from 5-10 pm, Tuesday through Saturday.
