About The Position

Position Purpose & Summary The primary objectives of a PM pastry cook are production and plating of pastry products, desserts, and bakery items for the dinner service of Grandview. Coordinate the preparation of food according to standards set by the Executive Pastry Chef and is responsible for managing daily production and execution of all bakery/pastry items. Essential Functions: Communicate all product needs to the executive pastry chef. Coordinates production of all pastry, bakery, and dessert items. Assist's executive Pastry chef with all specialty functions and holidays, along with plating desserts for restaurants Ensures all cuisine that is served is done so to the specifications of the Executive Pastry chef. Ensures workstation is properly stocked using mis en place technique for banquets or the ala carte line. Maintains a clean and sanitary workplace, special cleaning projects as assigned by the chefs. Maintains proper order of all kitchen equipment and reports any deficiencies to the chefs or managers. Establish cross-departmental channels of communication among teammates that are consistent and complete. To engage as a positive member of the culinary team. Observe and adhere to training and safety guidelines. Marginal Functions: Perform other duties as assigned. Problem solving information is clear but further investigation is needed to define problem may require modifying procedure to achieve desired results. Interface positively with other departments, helping when needed. Displays care for the use of equipment and maintain an organized and professional work environment. Position Requirements: Minimum Knowledge & Skills: Position requires advanced knowledge of specialized or technical field or a through knowledge of practices and techniques of a professional pastry kitchen. Requires a full knowledge of policies and procedures, and the ability to determine the best course of action and explain that to the chef. Open Schedule External and Internal Personal Contact: Communications: Daily – Written and reading, line ups Weekly – weekly departmental meetings Occasionally – Participate in one-on-one coaching sessions. Teamwork and Collaboration: This position requires continuous teamwork as well as internal and cross-departmental communication.
