About The Position

The Gaylord Palms Resort & Convention Center is collaborating with the Rouxbe Cooking School to provide culinary associates with online training opportunities to advance their careers. Through Rouxbe's self-paced online platform and culinary training curriculum, Marriott associates at all experience levels will have access to numerous well-designed and visually engaging lessons directly applicable to their jobs. The role involves preparing special meals or substitute items, regulating temperatures of cooking equipment, thawing food, ensuring proper portioning, arrangement, and garnishing of food, maintaining food logs, and monitoring food quality and quantity. The Pastry Cook I will communicate assistance needs during busy periods, inform the Chef about excess food items for daily specials, and notify Food & Beverage service staff of menu specials and out-of-stock items. Key responsibilities include preparing and cooking food according to recipes, quality standards, presentation standards, and food preparation checklists, as well as preparing cold foods. The position also entails assisting management with hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees, and serving as a role model. Adherence to all company, safety, and security policies and procedures is required, including reporting maintenance needs, accidents, injuries, and unsafe work conditions, and completing safety training and certifications. The associate must maintain a clean and professional appearance, uphold confidentiality of proprietary information, and protect company assets. Anticipating and addressing guests’ service needs, communicating professionally, fostering positive working relationships, supporting team goals, and responding appropriately to employee concerns are also essential. The role requires ensuring adherence to quality expectations and standards. Physical demands include standing, sitting, or walking for extended periods, reaching overhead and below the knees, bending, twisting, pulling, stooping, and moving, lifting, carrying, pushing, pulling, and placing objects weighing up to 25 pounds without assistance. Requirements

  • Ability to stand, sit, or walk for an extended period of time.
  • Ability to reach overhead and below the knees, including bending, twisting, pulling, and stooping.
  • Ability to move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.
  • No supervisory experience.

Nice To Haves

  • Technical, Trade, or Vocational School Degree.
  • At least 3 years of related work experience.

Responsibilities

  • Prepare special meals or substitute items.
  • Regulate temperature of ovens, broilers, grills, and roasters.
  • Pull food from freezer storage to thaw in the refrigerator.
  • Ensure proper portion, arrangement, and food garnish.
  • Maintain food logs.
  • Monitor the quality and quantity of food that is prepared.
  • Communicate assistance needed during busy periods.
  • Inform Chef of excess food items for use in daily specials.
  • Inform Food & Beverage service staff of menu specials and out of stock menu items.
  • Ensure the quality of the food items.
  • Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist.
  • Prepare cold foods.
  • Assist management in hiring, training, scheduling, evaluating, counseling, disciplining, and motivating and coaching employees.
  • Serve as a role model.
  • Follow all company and safety and security policies and procedures.
