About The Position

The Pitmaster is responsible for all grilling operations for our quick service BBQ restaurants, Mitch’s Texas Style BBQ. This position is responsible for all aspects of the grilling process, from raw to finished product. The Pitmaster will also assist in the training of new Team Members in the grilling process to meet product quality standards as set by the Company.

Requirements

  • Prior, verifiable experience as a Pitmaster is highly desired, but not required.
  • Effective critical thinking and creative problem-solving skills as it relates to the grilling process.
  • Excellent written and verbal communication skills.
  • Excellent conflict resolution skills; strong self-concept and ability to make decisions.
  • Excellent organizational and time management skills; keen attention to detail.
  • Requires rapid and thorough decision making and creative problem-solving skills, good judgment as well as the ability to accept personal accountability for areas of responsibility.
  • Acts with integrity and professionalism.
  • Experience with MS Office suite.
  • Limited travel for ongoing training may be required.
  • Irregular hours and weekends will be required according to the needs of the business.
  • Must possess and maintain a Food Safety Manager Certification throughout employment.
  • 2-5 years of experience in the hospitality industry preferred. This may include restaurants, commissary environments, industrial food production facilities, etc.
  • Demonstrated understanding of the BBQ culture, techniques, and skills needed to ensure superior product quality.
  • Ability to stand (50%), walk (30%), kneel/squat (10%) and bend (10%).
  • Ability to push, lift and pull up to 75lbs.
  • Ability to work around kitchen equipment that is kept at high temperatures i.e. smokers, ovens, flattops, etc.
  • Ability to move and position oneself to operate in and around commercial kitchen equipment which includes ovens, mixers, smokers, etc.
  • Position requires grasping and utilizing manual dexterity including hand/finger coordination and the utilization of color vision.
  • Frequent hand washing is required.
  • Frequent use of cleaning chemicals.

Responsibilities

  • Ensure raw product is properly prepared for the grilling process (weighed, trimmed, seasoned to recipe).
  • Ensure all food preparation areas and utensils are clean and sanitary at all times.
  • Ensure all equipment needed for the grilling and preparation process is in a safe, sanitary, and good working condition.
  • Maintain equipment in a clean and sanitary condition through regular daily cleaning, weekly equipment inspections, and detail equipment as directed by the Kitchen Manager, or his/her designee.
  • Read and understand orders placed by our restaurants, as relayed by the Kitchen Manager and Mitch’s District Manager, for the weight and/or quantity needed to meet sales expectations.
  • Begin the grilling process as directed by Division policy & procedure; monitor throughout the grilling process to ensure product quality meets Company standards.
  • Package finished product as directed by Division policy & procedure in a manner that maintains product quality and food safety integrity.
  • Maintain records for distributed product for daily review by the Kitchen Manager, or his/her designee, in order to ensure inventoried items are properly accounted for.
  • Report all quantities of waste to the Kitchen Manager immediately.
  • Inventory raw materials as directed by the Kitchen Manager to ensure proper stock levels are maintained, Company assets are protected from shrink, and verify restaurant orders are filled as directed.
  • Ensure Kitchen Drivers have all relevant information to complete deliveries to our restaurants in a timely, complete, and safe manner.
  • Receive raw product from food vendors and ensure it is properly accounted for, received in an acceptable manner (proper temperature, unaltered and intact packaging, etc.) and properly stored according to safe food practices and Company policies/procedures.
