About The Position

The Mi Casa Specialty Cook is responsible for all types of cooking functions required for the preparation of specialty (Mexican) menu items. This role involves preparing recipes and food items in accordance with the Executive Room Chef’s requirements. Key responsibilities include maintaining all areas according to Clark County Health Department and Food Safety auditing standards, completing daily menus and food products across the kitchen line, and following recipes with a sense of urgency, attention to detail, and proper food presentation. The cook must ensure accuracy in all recipes and plating, report any poor product or quality issues immediately, and manage daily station inventory to guarantee quality. Additionally, the position requires reporting engineering needs or equipment malfunctions, developing guest loyalty through personalized attention, and adhering to all Silverton Standard Operating Procedures and Be Amazing Service Standards. The role also involves maintaining open communication with managers, demonstrating a positive and professional demeanor, accepting performance feedback, and ensuring regular and punctual attendance.

Requirements

  • Must have line cooking experience in a high-end restaurant.
  • Knowledge of grill, flat top, broiler, steamer, deep fryer, salamander, and Sautee station.
  • Specific knowledge pertaining to the required cuisine (Mexican).
  • Knowledge of taking temperature of steaks.
  • Knowledge of breakdown of seafood.
  • Must be at a minimum of 21 years of age.
  • Ability to communicate in English with guests and co-workers.
  • Possession of /or ability to possess a Health card.
  • Identification that establishes identity.
  • Identification that establishes the right to work in the United States.

Responsibilities

  • Maintenance of all areas in accordance with Clark County Health Department and Food Safety auditing.
  • Completion of all daily menus and food products on all parts of the line/kitchen.
  • Follows recipes and/or product directions for preparing all specified menu items; works with a sense of urgency to meet time goals while adhering to recipe standards and displays an attention to detail and food presentation.
  • Accuracy in all recipes used in outlet, whether produced there or not, and if applicable-proper plating in accordance with set standards.
  • Report any poor product or below quality items to sous chef or above immediately upon noticing.
  • Daily taking and maintaining of your station and areas inventory.
  • Guaranteeing quality product is always on your station.
  • Report any engineering needs or equipment failures/malfunctions to the culinary team or outlet manager as soon as they are noticed.
  • Develop guest loyalty through personalized customer attention (internal and external when possible).
  • Act in accordance with all Silverton Standard Operating Procedures.
  • Perform other duties requested as assigned.
  • Maintain a high quality of guest service according to Silverton Be Amazing Service Standards.
  • Thorough knowledge of applicable Company and departmental policies and procedures as well as the willingness to learn and follow any policy or procedure that may be introduced in the future.
  • Adhere to all appearance and uniform standards.
  • Maintain an open line of communication with Managers.
  • Maintain a positive and professional demeanor during all interactions with guests, fellow Team Members, and Vendors.
  • Ability to accept performance feedback in a professional manner.
  • Regular attendance on all scheduled shifts is considered an essential function of the job.
