Whatever your need, from white-linen presentation to casual family dining, our procurement experts will find the best-quality options that work for your budget and pack-size needs, carefully selected from our extensive meat assortment. Prepare high quality cuts of meats according to customer specifications using company standards and adhering to all safety requirements. Stock Yards St. Louis Schedule: Monday - Friday 7:00 am - 3:30 pm

Requirements

Kitchen prep experience and some basic knife skills preferred; minimum of 6 months experience as a trimmer preferred.
6 months in production, manufacturing or meat trimming experience required.
Knowledge of poultry, beef, lamb, and pork products
Knowledge of USDA grades and standards.

Nice To Haves

Experience with laser portion machinery or other meat production equipment preferred.

Responsibilities

Trim fat and skin from meat and customize portions of products using knives, or other meat production equipment.
Count and stack on tray portions per customer and company specifications.
Label portion with supplied number product labels.
Set up cutting room as required.
Keep cutting room and surrounding area clean and sanitized.
Follow company GMP (Good Manufacturing Practices) to maintain sanitary conditions.
Work standing continually in a refrigerated environment 35°F- 45°F.
Other duties as assigned by Manager.
