The Meat Department Manager / Butcher is responsible for overseeing the daily operations of the meat department, including managing staff, maintaining product quality, ensuring customer satisfaction, and achieving sales targets. This role combines managerial responsibilities with hands-on butchery, ensuring that the department runs smoothly and efficiently.

Requirements

  • High school diploma or equivalent.
  • Extensive experience in meat cutting and butchery, preferably in a retail environment.
  • Previous managerial or supervisory experience in a meat department is highly desirable.
  • Minimum 18 years or older.
  • Expert knowledge of meat products, cuts, and preparation techniques.
  • Strong leadership and team management skills.
  • Excellent customer service and communication skills.
  • Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
  • Proficiency in inventory management and financial analysis.
  • Food Safety Certification required.

Nice To Haves

  • Additional certifications in meat cutting or butchery are a plus.

Responsibilities

  • Plan, organize, and direct the operations of the meat department.
  • Ensure the department meets or exceeds sales and profit goals.
  • Maintain accurate inventory levels, placing orders as needed to keep stock replenished and minimize waste.
  • Implement and enforce safety, sanitation, and security procedures to comply with regulatory standards.
  • Perform skilled meat cutting, trimming, deboning, grinding, and packaging.
  • Ensure all meat products are prepared according to company specifications and customer preferences.
  • Monitor product quality and freshness, ensuring that all meats meet company standards.
  • Provide exceptional customer service by assisting customers with their selections, answering questions, and making recommendations.
  • Address and resolve customer complaints and issues promptly and professionally.
  • Recruit, train, supervise, and evaluate meat department staff, including butchers and apprentices.
  • Create work schedules, ensuring adequate coverage during peak times.
  • Foster a positive and productive work environment, encouraging teamwork and professional development.
  • Develop and implement merchandising strategies to maximize sales and profitability.
  • Ensure attractive and effective product displays to attract customers.
  • Conduct regular market analysis to stay competitive with pricing and product offerings.
  • Monitor department budgets and control costs, including labor, inventory, and waste.
  • Analyze sales data and generate reports to track performance and identify areas for improvement.
