Assists in processing of meat for Food Service operations at all BR facilities, to include daily rotation of inventory, control activities, distribution of meat to kitchen, facility/equipment maintenance and related activities. Assists in all activities related to the slaughter plant to include processing, packaging and delivering of beef and related activities. Essential Duties: 1. Exhibits regular and punctual attendance. 2. Maintains daily rotation and inventory of meat and grocery store stock. 3. Assists in the processing, packaging and delivery of beef and pork. 4. Coordinates beef and pork needs of the Food Service Division with the Coordinator, Slaughter and Meat Processing Operations / Kitchen Manager. 5. Efficiently distributes processed meat to kitchen in the appropriate quantities. 6. Provides training and direction for residents participating in slaughter and meat processing activities. 7. Ensures that the slaughter plant and meat cutting shop are clean, organized, safe and operational. 8. Ensures that Dining Facility and equipment is organized, safe, clean and maintained. 9. Generates reports and documentation as assigned. Maintains logs, records and related items for meat processing and slaughter operations. 10. Assists in the preparation of the Rodeo Beef. 11. Assists with food service line as needed. 12. Assists with Dining Hall operations as needed. 13. Exhibits appropriate interaction with residents.
