As a Line Cook Cast Member, you will be focused on creating a magical and enjoyable dining experience by ensuring the highest quality food product is provided to our Artisan Club Members and Guests. You will showcase your skills by preparing menu items and assisting with food inventory, ensuring food preparation areas are well-maintained. You will practice safe food handling and support all kitchen staff. You will keep your focus on maintaining high Guest satisfaction in this fast-paced, demanding environment. Requirements

  • You must be at least 18 years of age to be considered for this role
  • 2+ years of line cook experience (including grill and sauté experience) OR a culinary certificate and 1+ year of line cook experience
  • Experience using cooking equipment such as grills, gas range, electric range, broiler, deep fat fryer, serving table, waffle iron, griddle, skillets and other standard kitchen equipment
  • Shown knowledge of HACCP and proper food handling techniques
  • Knowledge of basic butchering, food allergies, seasonal ingredients and menus
  • Ability to follow recipes and conversions
  • Strong judgement of food quality and production; understands the impact of spoilage
  • Ability to work in a fast-paced, intense environment while following all safety protocols

Responsibilities

  • Prepare, season, and cook to order a variety of menu items to the highest standards of quality and presentation throughout the day, including breakfast, lunch, and dinner meal periods
  • Cook, mix, and/or season ingredients to make dressings, sauces, gravies, batters, fillings and spreads
  • Bake, broil, cook, fry or steam food items as required to complete assigned production
  • Ensure that all food is cooked according to proper standards and prepared in a timely and efficient manner
  • Prepare, handle and serve food products including but not limited to meat, meat products, pork, shellfish, egg, dairy, gluten, soy, and nut products
  • Formulate and prepare sophisticated recipes which may include baker/pastry recipes and specialty desserts for banquets and restaurants.
  • Portion and arranges food on serving dishes, ensuring correct portion control and meeting all standards of meal presentation
  • May be required to prepare exhibition omelets, pastas, sandwiches, pizza, etc and be an attendant at a carving station
  • Must maintain a clean and organized kitchen, adhering to health and safety guidelines including all HACCP (Hazard Analysis and Critical Control Points) procedures
  • Regulates temperature of all applicable kitchen equipment
  • Assist with inventory and stock rotation
  • Collaborate with the culinary team to innovate and improve menu offerings
  • Assist with banquet meals for events
  • Load/unload dishware, glassware and silverware
  • Manually scrape plates, utensils and other dishware prior to washing and scrub large pots and pans at a pot sink
  • Hand-polish items such as silverware and glasses
  • Sort pots, pans, dishes, glassware, flatware and utensils and restock into designated locations
  • Maintain sanitation standards for the cleaning of all freezers, coolers, walk-ins, storeroom, and the back dock area
