About The Position

If you said YES to any of the questions above, then you’re in the right place - Hillwood Country Club in Nashville TN is looking to hire a talented Line Cook for its Kitchen team. This seasonal summer position will have opportunities to create daily specials and menu items using the finest seafood, fresh produce, and prime beef in a well-equipped scratch kitchen.This position will work restaurant and banquet operations by assisting the Chef team and working Stations as needed by preparing cold products according to club's standard recipes. Responsible for maintaining the inventory of all dressings and vinaigrettes needed by the a la carte and banquet departments.

Requirements

  • Knowledge of basic culinary fundamentals.
  • Ability to prepare food items required for club's menus.
  • Knowledge of and ability to perform required role during emergency situations.
  • Knife skills: Peeling, seeding, cutting, various fruits and vegetables
  • Slicing various breads for items such as: croutons, crostini, sandwiches, and canapes
  • Chopping, washing, spin drying lettuces.
  • Butchery of meats and seafoods
  • Cooking skills: Working A la carte restaurant Line positions
  • Blanching & sautéing vegetables
  • Grilling & sautéing various meats and vegetables
  • Following recipes for various sauces & dressings
  • Professional Kitchen skills: Organization
  • Cleanliness and sanitation
  • Use of prep lists and recipes
  • Proper use of utensils and equipment
  • Proper cold storage
  • Proper hot holding of food items
  • Teamwork
  • Must be able to stand for extended periods of time

Nice To Haves

  • At least two years' experience in a high volume scratch kitchen a PLUS
  • Flexibility and a willingness to learn is a MUST

Responsibilities

  • Adheres to state and local health and safety regulations.
  • Maintains the highest sanitary standards.
  • Notifies Sous Chef in advance of expected shortages.
  • Maintains security and safety in work area.
  • Covers, dates and neatly stores reusable leftover products.
  • Ensures that work area and equipment are clean and sanitary.
