About The Position

Join the culinary team at the Portland Regency Hotel & Spa , a beautifully restored Historic Hotel of America located in the heart of Portland’s Old Port District. We’re looking for a talented and reliable Line Cook to prepare high-quality dishes in a fast-paced, team-oriented kitchen. The Line Cook prepares and cooks breakfast, lunch, and/or dinner menu items, as well as banquet meals, in accordance with hotel standards. This role requires the ability to perform proficiently on at least two kitchen stations while maintaining a clean, organized, and safe work environment. Requirements

  • 1–2 years of line cook or kitchen experience preferred; or equivalent combination of education and experience.
  • ServSafe® certification
  • Strong time management and multitasking abilities.
  • Attention to detail and commitment to quality.
  • Ability to follow instructions and communicate effectively with the culinary team.
  • Able to stand for long periods, lift up to 50 lbs, and work in a busy kitchen environment.

Responsibilities

  • Prepare and cook all food items for breakfast, lunch, dinner, and banquet functions.
  • Set up, maintain, and break down assigned kitchen stations.
  • Prepare daily specials and side dishes.
  • Maintain proper food storage and rotation (FIFO) for all ingredients.
  • Keep hot foods above 140°F and cold foods below 40°F at all times.
  • Clean and sanitize work areas, equipment, and utensils after each use.
  • Record daily temperatures and ensure proper food safety standards.
  • Secure all kitchen areas, coolers, and equipment at the end of shift.
  • Assist with additional kitchen duties or special events as assigned.
