About The Position

Brunkow Cheese is seeking a dedicated Cheesemaker or Cheesemaker's Apprentice to join their artisanal cheese factory. The role involves overseeing the production of various cheeses, ensuring high quality and adherence to food safety protocols, while contributing to a supportive and family-oriented work environment.

Requirements

• Preferred: Valid Wisconsin Cheese Maker License & Pasteurizer Operator Certification, or willingness to obtain.
• Preferred: 1+ years' experience in food manufacturing.
• Minimum high school diploma or equivalent skills by experience.
• Detail-oriented with the ability to complete tasks independently.
• Ability to work well with others and direct others as needed.
• Must be able to communicate effectively in English.

Responsibilities

• Oversee the making of Brun-uusto, modifying the process in set solidity, cook temp, & stir out time.
• Set and cut the vat, drain whey, ditch, dip, salt/add ingredients, hoop, and press cheese to attain optimal yield.
• Test and monitor pH, appearance, and development of specialty cheeses such as cheddar and cave-aged cheeses.
• Keep accurate and legible recordings of make data and sanitation procedures.
• Operate the pasteurizer, including start-up/shut down procedures and maintaining documentation.
• Assist in cleaning and sanitizing vats, forms, racks, tables, and other product surfaces.
• CIP milk & whey silos and product lines.
• Participate in team meetings to increase plant efficiency and reduce labor costs.
• Assist in the development & marketing of new products via R&D findings.
• Work as a food safety team-member to ensure high-quality product handling.
• Ensure compliance with general plant and chemical safety protocols.
• Perform affinage of cave-aged cheeses, including washing, flipping, brushing, and monitoring.
• Assist in other departments of the plant as needed.
