The Lead Meat Cutter is responsible for assisting with all functions specific to the Meat and Seafood Department to ensure that the department runs smoothly and effectively in the absence of the department Managers. Our Lead Meat Cutter position will make you an immediate star! You’ll be front and center in our busy Meat Department, using a valuable skill, working with a terrific talented team. Guests often tell us that our Meat Team is their favorite part of shopping at HL. You’ll work with the finest products available, and meet our farmers and producers who bring us incredible local meats and poultry. The Ideal Candidate will: Properly cut, trim, bone, tie and grind meats and whole animals such as beef, pork, poultry, veal, lamb, venison, and fish, and ensures minimal waste Ensure that all items (meat and seafood) in back stock are properly placed in the cases or on shelves Oversee daily merchandising and product maintenance; makes sure shelves are fully stocked, organized, clean and that product has proper representation/facing on shelves; ensures all product is pulled to the front of the shelves and has an organized appearance Wrap weigh, label and price product accurately and per protocol Perform shelf tag maintenance – makes sure all products have accurate tags and communicates needs for any changes

Requirements

  • High School Diploma
  • Meat & seafood retail environment experience
  • Previous experience in breaking down primal cuts of meat

Nice To Haves

  • Culinary Degree Preferred
  • Previous experience working with local products, is preferred
  • Food costing and purchasing experience preferred

Responsibilities

  • Properly cut, trim, bone, tie and grind meats and whole animals such as beef, pork, poultry, veal, lamb, venison, and fish, and ensures minimal waste
  • Ensure that all items (meat and seafood) in back stock are properly placed in the cases or on shelves
  • Oversee daily merchandising and product maintenance; makes sure shelves are fully stocked, organized, clean and that product has proper representation/facing on shelves; ensures all product is pulled to the front of the shelves and has an organized appearance
  • Wrap weigh, label and price product accurately and per protocol
  • Perform shelf tag maintenance – makes sure all products have accurate tags and communicates needs for any changes
  • Acts as a positive role model for all staff
  • Facilitates knowledge of product lines by providing Meat staff with educational tools and opportunities
  • Assists with training for all new staff members
  • Troubleshoots staff call-outs and attempts to find coverage or shifts priorities, if necessary
  • Ensures all staff are being productive and working safe
  • Exemplifies and trains department staff on providing genuine, compassionate and extra mile service to our guests
  • Maintains an Apprentice Meat Cutter training manual/plan which includes timelines and an evaluation of skill set obtained
  • Provides thorough training to all Apprentice Meat Cutters in the proper technique for cutting, trimming, boning, tying, and grinding meats and whole animals such as beef, pork, poultry, veal, lamb, venison, and fish with the ultimate goal of progression to Meat Cutter status
  • Evaluates all Apprentice Meat Cutters regarding progress and ensures that they have met all the training goals and objectives to obtain Meat Cutter status
  • Provides Meat Cutters with feedback, coaching and guidance to further develop their technique and ensure they are always following HL standards and protocols
  • Meets with the Manager and Assistant Manager to discuss any concerns/issues regarding staff training and their progress
  • Occasional travel to other HL locations to assist with staff training, as necessary
  • Complete all shrink reporting responsibilities weekly set forth by VP of Purchasing, Owners, and Finance
