About The Position

Lead Line Cooks are responsible for preparing and plating all menu items and special requests with proper garnishes. Must be able to make rational decisions in a timely manner while maintaining established quality standards.

Responsibilities

  • Work a station on the line daily with knowledge of respective set-ups.
  • Responsible for production of stocks and sauces, menu items, daily specials
  • Maintain food inventories daily, noting outages and arranging future deliveries.
  • Assist with receiving and storing all food and non-food items, rotation of stock.
  • Check with the Chef on special events and/or needs of the day.
  • Meet daily with kitchen staff to clean coolers. Distribute leftovers for maximum return, determine butchering needs, and prepare daily work assignments for cooks
  • Assist in any station needing help in production of new menu items, daily specials, or specific guest requests.
  • Work with staff to ensure timely set-up of stations and accurate execution.
  • See to overall cleanliness of kitchen, nightly breakdown, and security.
  • Perform all other tasks as requested by the Chef.
  • Report to work as schedule stipulates.
  • Prepare and plate menu items and special requests.
  • Set up and serve functions and help break down.
  • Maintain sanitary work stations.
  • Post-service cleanup of work area and kitchen.
  • Check on and maintain par of basic stocks.
  • Rotate, cover, and date all food items.
  • Clean and organize refrigeration, freezers and dry storage areas.
  • Prep for following day.
  • Prep list complete and prep not completely empty for your day off.
  • Notify Sous-Chef of food shortages and equipment failures.
