Requirements

  • Knife skills preferred and experience working in a healthcare setting preferred.

Responsibilities

  • The Lead Cook is responsible for the preparation of all food items as per standardized recipes.
  • Ensures that all items on the cooks line are stocked at all times and maintains the cleanliness of all line equipment.
  • The Lead Cook is responsible for effectively communicating with the Executive Chef/Sous Chef on any service, product, or staff issues/concerns.
  • Ensures all line stations are stocked and ready for service
  • Completes or verifies daily line checks and temperature logs
  • Manages weekly WAG thaw cart pulls, Specials, and product readiness
  • Walks inventory and completes order list completion
  • Enforces FIFO, labeling, dating, and rotation standards
  • Ensures proper consistencies are achieved for mechanically altered diets
  • Ensures therapeutic diets are properly prepared
  • Maintains consistent quality and plate presentation across the line
  • Communicates service, product, or staffing concerns to leadership
