GENERAL SUMMARY OF DUTIES: Maintain cleanliness of all kitchen outlets by bending, reaching, lifting, sweeping and mopping of floors and other duties that are assigned by the Assistant Executive Steward or the Executive Steward. ROLE AND RESPONSIBILITIES: (INCLUDES BUT IS NOT LIMITED TO THE FOLLOWING) Wash all types of dishes and glasses; lift racks, plate stacks, bus pans and silverware weighing a maximum of 40 pounds to shoulder height. Clean floors, mats and drains for sanitary reasons using mops, brooms, scrapers, scrubbers and chemicals. Clean stainless steel or wipe down with soap and water. Remove dirty dishes from the cook's line and take to dish room for cleaning and restock cook's line with clean dishes. Maintain the cleanliness of employee's bathrooms by sweeping, mopping, scouring, and (overall cleaning), by bending, kneeling and crouching. Clean and polish the silverware and hollowware on a daily basis or as needed for functions by lifting silverware, hollowware and bus pans weighing a maximum of 40 pounds above the waist.
