Summary of Position As Junior Sous Chef, you will be required to show a good Knowledge in all aspects of Food Handling & Sanitation standards, show good Leadership & Teamwork skills, must possess the ability to assume command and manage all aspects of the Kitchen Operation whist the chef / sous chef is off line. Must command the ability to work ahead, always working for the next day.

Requirements

  • 7-year culinary experience or culinary equivalent
  • Must possess good attitude, attention to detail, and ability to work under pressure
  • Must possess the ability to read, understand and communicate verbally in English
  • Knowledge in all aspects of Food Handling & Sanitation standards, show good Leadership & Teamwork skills
  • Display proficient knife skills and knowledge of basic cuts
  • Able to understand the importance of and follow a recipe, including identify various food products, dairy, meats and produce
  • Excellent understanding of various cooking methods, ingredients, equipment, and procedures
  • Accuracy and speed in executing assigned tasks
  • Knowledge of the standard methods and techniques used in food handling, storage, preparation, cooking and serving.
  • Knowledge of the safety practices and procedures followed in food handling, storage, preparation, and cooking.
  • Knowledge of the effects of time, temperature, and weather conditions on food.
  • Knowledge of the terminology, standard abbreviations and symbols used in food preparation and cooking.
  • Knowledge of the types and causes of cooking deficiencies.
  • Skill in the use of equipment and utensils used for weighing and measuring food.
  • Ability to judge the proper quality, appearance, and condition of food by sensory observation.
  • Ability to read and interpret recipes and weights and measures tables.
  • Ability to follow oral and written instructions.
  • Ability to establish and maintain harmonious working relationships with others.

Responsibilities

  • Assist the on-shift sous chef / chef in the overall smooth running of all Culinary operations within the specified Kitchen
  • Assist with all culinary employee allocations within the specified kitchens
  • Control and coordinate all culinary employee schedules
  • Assist and support all catering & banquets needs as needed
  • Assist in the communication between all other culinary operations.
  • Responsible for the organization, Mis en Place and Production of all menu items within that specified kitchen
  • Assist in the control and submission of all Food Requisitions and Transfers to and from that specified kitchen
  • Assist in the Control and trouble shooting of all Food Spoilage
  • Assist in the control and upkeep of all SOP’s previously set.
  • Assist in the coordination with stewarding for all culinary set-up and equipment needs for the specified kitchen
  • Assist in the coordination with stewarding for all Culinary cleaning schedules within the specified kitchen
  • Responsible for assisting in all Culinary Health, Hygiene & Safety
  • Assist in the Training and re-training of all Culinary Employee’s within the specified kitchen
