About The Position

Galloway Ridge is an upscale continuing care retirement community. This position is primarily responsible for the production of food through accurate prep, adherence to standardized recipes, and focus on accuracy. The Healthcare Line Cook demonstrates a thorough knowledge of work assignments and meets quality and timeliness objectives. The role requires flexibility, versatility, and open-mindedness to adjust to changing requirements and environments. Professionalism in performance, behavior, and appearance is expected, along with maintaining resident confidentiality and privacy. The cook must be courteous and cooperative with residents, families, co-workers, subordinates, supervisors, and other department staff, and will practice and support all directives from the Healthcare Sous Chef and the Director of Healthcare Dining, while adhering to Galloway Ridge Core Values.

Requirements

  • High School Diploma or GED
  • Must be ServSafe certified
  • Must have at least 2-3 years of food service experience.
  • Maintain all certifications necessary for employment.
  • Commit to continually improving skills through educational opportunities.
  • Must be able to taste and smell food to determine quality and palatability.
  • Must be able to follow oral and written instructions.
  • Must be able to move intermittently throughout the workday.
  • Maintain a current knowledge of applicable federal, state, or other regulations.
  • Knowledge of food storage/food hierarchy and kitchen sanitation.
  • Comply with GR safety policies and procedures.
  • Report safety hazards and injuries immediately.
  • Provide emergency assistance to residents, visitors, or employees following proper procedures.
  • Be courteous and cooperative with residents, families, co-workers, management, and other staff.
  • Exhibit professionalism in conduct and appearance.
  • Must perform simple arithmetic to handle and understand measurements and recipe conversions.
  • Needs proficient knife skills, knowledge of protein fabrication.
  • Cooking skills include frying, poaching, baking, roasting, stewing, braising, sautéing, grilling, and steaming.

Nice To Haves

  • Culinary degree or formal culinary training preferred
  • Prior experience in a healthcare setting is desired

Responsibilities

  • Prepare food using cooking methods per standardized recipes, therapeutic diets and special-order diets with ability to adjust amounts depending on assignment and business needs.
  • Process diet changes and new diets as received.
  • Prepare and serve substitute foods to residents who refused foods served.
  • Assist with serving meals as necessary on a timely basis in accordance with standardized portion control procedures.
  • Work in a clean and sanitary manner with focus on station and equipment used, and participate in end of shift cleaning and sanitizing of the kitchen.
  • Put away deliveries and prep items according to FIFO method.
  • Stock assigned station according to levels directed by the Healthcare Sous Chef.
  • Follow and reproduce plate presentation standards.
  • Demonstrate a thorough knowledge of work assignments and perform in a manner to meet quality and timeliness objectives.
  • Follow instructions consistently.
  • Participate in all BOH training opportunities, in-services, and line-up sessions, including professional development/skills competency in all activities.
  • Complete Relias training and maintain current ServSafe certification.
  • Maintain a current knowledge of federal state and other regulations applicable to the position.
  • Comply with applicable safety policies and procedures.
  • Report any potential safety hazards or injury immediately to supervisor or appropriate personnel.
  • Provide proper assistance to residents, visitors or employee in an emergency situation.
  • Perform other duties as assigned by the Director of Healthcare Dining, including enhancing the Resident Experience.
