The Head of Product Research & Development at Carlo's Bakery is responsible for leading the R&D department in recipe testing and documentation. This role involves developing new product concepts, improving existing products, and ensuring compliance with food safety standards. The candidate will work closely with various departments to manage R&D projects, oversee production processes, and support marketing initiatives.

  • Lead the R&D team in the development of new products such as cakes, cookies, custard, and pastries.
  • Manage and prioritize R&D projects effectively.
  • Oversee the management of inventory for ingredients and supplies in the R&D lab.
  • Create product specifications, nutritional declarations, and ingredient labels in compliance with FDA regulations.
  • Collaborate with the production manager to scale up recipes for production.
  • Develop SOPs and detailed instructions for scaled-up production recipes.
  • Troubleshoot production problems and provide solutions.
  • Conduct shelf life studies and create reports for bakery products.
  • Serve as the technical lead in all co-manufacturing projects for outside customers.
  • Support marketing in the development of new products for e-commerce.
  • Bachelor of Science in Food Science or a related field.
  • 10+ years of experience in the food industry.
  • HACCP certification.
  • Experience in a kitchen/bakery setting.
  • Proficiency in Microsoft Excel and other computer programs.
  • Experience with machine learning and computer vision (1 year preferred).
