The Head Baker oversees all baking operations for the clubhouse, banquet facilities, and specialty events. This role is responsible for producing high-quality artisan breads, breakfast pastries, desserts, and specialty baked goods while maintaining luxury presentation standards and operational efficiency. The Head Baker collaborates closely with the Executive Chef and culinary leadership to enhance the club’s dining experience

Requirements

  • 5+ years professional baking experience; luxury resort, hotel, or private club preferred.
  • Strong knowledge of bread fermentation, laminated doughs, pastry techniques, and dessert plating.
  • Creative menu development skills with attention to seasonal ingredients.
  • Leadership and team development experience.
  • Ability to manage early morning production schedules and peak seasonal demand.

Responsibilities

  • Lead daily production of artisan breads, laminated pastries, breakfast items, and plated desserts.
  • Develop seasonal baked goods menus aligned with club events, holidays, and tournament schedules.
  • Maintain strict quality control over flavor, texture, presentation, and consistency.
  • Oversee recipe standardization, portion control, and cost management.
  • Supervise and train bakery staff, including Baker Assistants and pastry team members.
  • Manage inventory, ordering, and proper storage of bakery ingredients.
  • Ensure compliance with food safety, sanitation, and labeling standards.
  • Coordinate custom desserts and specialty cakes for weddings, member celebrations, and private events.
  • Maintain organization and cleanliness of bakery workspaces and equipment.
