About The Position

Responsible to complete HACCP Operational Sanitation verifications for Evisceration, Second Processing, Cooler and Shipping, in conjunction with a thorough visual inspection to identify discrepancies or deficiencies. Perform on-the-spot corrections by monitoring for proper, immediate resolution to identified problem areas. Provide direct observations monitoring daily for verification purposes for each of the seven CCP'S. Conduct hourly records review of Supervisor's Department Operational Sanitation Reports, CCP Monitoring Checks, Ice Melt Tests, Shipping Temperatures, and Paw Temperatures, while ensuring checks are completed and corrective actions completed (if necessary) before product is approved for shipment. Responsible to shut down any portion of the production line that is not meeting HACCP standards.  Verify all scheduled HACCP Monitors have clocked-in and are present for duty. Ensure product is in compliance with Safe Food Handling Procedures and meets or exceeds regulatory requirements. Stamp all documents and maintain all HACCP and SSOP records for the facility.

Requirements

  • Physically and mentally able to perform the job.
  • Must be able to follow oral and written orders/instructions.
  • Should be able to work under minimal supervision and work well with others.

Nice To Haves

  • Good previous work and attendance record.
  • Must currently have 2 or less occurrences & maintain that level.
  • No write ups in the last 6 months.
