About The Position

Trapper's Sushi is looking for an experienced, people-first General Manager to lead one of our high-volume locations! As one of the Pacific Northwest's most recognized dining brands, our mission is simple: learn our customers' names and deliver unforgettable service and food that keeps them coming back for more. Position Overview The General Manager oversees all daily restaurant operations, ensuring revenue goals, profitability, guest satisfaction, and team performance meet Trapper's Sushi standards. This role is responsible for leading FOH and BOH teams, maintaining labor and cost controls, upholding safety and sanitation requirements, and fostering a culture grounded in our TRAPCHK core values.

Requirements

  • 3+ years of experience as a General Manager, Restaurant Manager, or Hospitality Manager in a high-volume setting.
  • Strong leadership, team-development, and conflict-resolution skills.
  • Knowledge of restaurant financials, scheduling, inventory management, and cost controls.
  • Familiarity with restaurant management systems, POS platforms, payroll software, and Microsoft Office.
  • Ability to maintain composure, multitask, and lead effectively during peak business.
  • Washington State Food Worker Card and MAST Permit required (or obtained prior to first day).

  • Hospitality, business, or culinary education preferred but not required.

Responsibilities

  • Lead FOH and BOH teams to deliver exceptional guest experiences rooted in our guiding principle: learn our customers' names.
  • Oversee daily restaurant operations, ensuring smooth service flow, food quality, accuracy, and cleanliness.
  • Hire, train, coach, and develop team members while maintaining a positive and accountable culture.
  • Manage labor, inventory, ordering, waste reduction, and cost controls.
  • Resolve guest concerns professionally and promptly, ensuring proper recovery and documentation.
  • Maintain compliance with all local/state health, safety, alcohol service, and labor regulations.
  • Partner with regional leadership on initiatives, performance metrics, and brand standards.
  • Strengthen community presence through local engagement, promotions, and events.
  • Demonstrate and uphold all TRAPCHK values: teamwork, respect, accountability, passion, communication, honesty, and kindness.
