About The Position

The Garde Manger Chef is responsible for overseeing the preparation and presentation of cold dishes, salads, and other culinary items in a large upscale resort environment. This role requires a strong background in culinary arts, particularly in garde manger, and involves maintaining high standards of food safety and sanitation. The chef will work closely with the culinary team to ensure efficient kitchen operations and uphold the quality of food served to guests.

Requirements

• 5 years of garde manger experience in an upscale resort or restaurant environment.
• Basic knowledge of the fundamentals of cooking and accepted standards of sanitation.
• Knowledge of operating all kitchen equipment, including stoves, ovens, broilers, steamers, and kettles.
• Basic mathematical skills necessary to understand recipes, measurements, and portion sizes.
• Ability to read and write in English to read recipes and communicate with team members.
• Sufficient manual dexterity to use all kitchen equipment, including knives, spoons, spatulas, and tongs.
• Ability to perform duties in confined spaces and within extreme temperature ranges.

• Culinary or Apprenticeship program preferred.

Responsibilities

• Supplying assigned workstation with all needed products and culinary equipment for prompt production.
• Preparing all the prep work for soups, sauces, salads, vegetables, and breakfast.
• Storing all food in refrigerated boxes including covers, labels, and dates, using the proper containers to protect against waste and spoilage.
• Maintaining area in a clean condition at all times.
• Performing general/routine cleaning tasks using standard hotel cleaning products as assigned by the supervisor to adhere to health standards.
• Keeping floors dry and clean to avoid slip/fall accidents.
• Performing other duties as requested, such as moving supplies and equipment, cleaning up slips, etc., to ensure a safe working environment.
