ROLE & RESPONSIBILITIES: The Fortezza Italiana Supervisor will share responsibility for oversight and execution of daily aspects of the East Lodge Fortezza Room and In Room Dining. The role of the Fortezza Italiana Supervisor will be a customer-facing and will need to support the broader restaurant staff by waiting tables and seating guests. The Fortezza Italiana Supervisor will work hand in hand with staff to support, monitor, develop and lead a team in a positive environment. Our team members use their creativity and talent to invent new solutions, meet new demands, and offer the most effective services/products in the industry for the best guest experience. The Fortezza Italiana Supervisor will be passionate about our culture, food, wine, alcoholic beverages, and service to thoroughly enjoy creating excellent experiences for our members and guests. The ideal candidate will have a friendly, outgoing disposition and previous experience working in a bustling, fast-paced, fine dining setting.

Requirements

  • Minimum of two (2) years supervising experience in a high-volume or craft setting preferred.
  • Strong knowledge of spirits, wine, beer, and cocktail techniques.
  • Experience managing inventory and ordering.
  • Ability to collaborate effectively with culinary teams for menu and beverage alignment.
  • Excellent leadership, communication, eye for detail and organizational skills.
  • Comfortable working under direction from multiple levels of management.
  • Able to lift up to 50 lbs and stand for extended periods.
  • Valid TIPS or ServSafe certification (or willingness to obtain upon hire).
  • Flexible availability including nights, weekends, and holidays.
  • Must possess customer service skills and strong oral communication skills.
  • Competency in dealing with members and fellow employees under circumstances requiring tact and diplomacy.
  • Must possess the ability to work effectively under time deadlines.

Responsibilities

  • Assist in the training of new employees as well as the continuous training of existing staff to uphold high levels of service
  • Oversee/Enforce staff uniform and appearance compliance
  • Employee Daily Log Completion
  • Oversee both front and back of house operations
  • Maintain high-quality food standards
  • Oversee our staff’s compliance with all health code and sanitation requirements
  • Provide exceptional customer service and lead staff to do the same
  • Respond to customer complaints quickly and resolve them effectively
  • Develop strategies with Manager for improving our customers’ dining experience
  • Assist in maintaining inventory for wine, beer, liquor, N/A beverages, coffee, etc. and ordering of restaurant goods and cleaning products
  • Identify methods our restaurant can use to cut waste, decrease costs, and improve profits
  • Promote upselling and suggestive selling to maximize food & beverage revenue while fostering a positive guest environment
  • FOH Daily Operations
  • Oversee the set-up, organization and service of the dining room/bar and ensure that the highest standards of quality and service be maintained
  • Cleanliness of FOH and BOH
  • Responsible for assigning responsibilities and delegating duties to staff
  • Responsible for transactions/gratuities that are rung into the POS
  • Speak with accounting on any discrepancies
  • Provide input on menus, special events and presentation efficiency
  • Attend monthly meeting with Senior F&B Manager, Banquet Operations Manager and Banquet/Conference/Bar Captains to assist with weekly preparations
