About The Position

Under limited supervision from the Food Service Administrator, responsible for the continued maintenance of an established food service program for 23 institutional cafeterias, 15,000+ inmates and FS employees. Supervises all cafeterias to ensure compliance with all applicable rules, regulations, and policies to include DHEC, SCDC food service policies, HACP and ServSafe. Accountable for the preparation & distribution of 15+ million meals yearly. Responds to inmates, FS staff and public inquiries concerning the FS program. Responsible for all institutional food service personnel actions to include screening applicant selections, annual evaluations, and corrective actions. Holds one-on-one coaching sessions with all direct reports at least every other month, more often if needed. Makes regular on-site visits to institutions for operational assessments and discussions with wardens, AWS and/or business manager. Actively involved in the design/layout of café renovations or new constructions. Supervises the USDA school lunch. Statewide traveling required. Headquarters in Columbia.

Requirements

  • A bachelor's degree and relevant program experience.
  • Must have (4) years of experience in a supervisory capacity.
  • A bachelor's degree and (2) years' experience in quantity and quality cooking.
  • An associate degree and (4) years' experience in quantity and quality cooking.
  • A high school diploma and (6) years' experience in quantity and quality cooking.
  • Must be certified in Hazard Analysis & Critical Control Point (HACCP) or ServSafe manager attain within six (6) months of employment.
  • Must be certified by the SCDC training academy or must successfully complete SCDC basic training within twelve (12) months of hire.
  • Must successfully complete the basic supervisory course within eighteen (18) months of employment.
  • Must successfully complete four (4) weeks of SCDC Basic Training upon hire.
