About The Position

The Food Service Manager will directly supervise the assistant food service manager and cook, and will be responsible for the overall management of food services, including the cafeteria and special food services, in compliance with MTC and customer directives. This role is based at the IAH Secure Adult Detention Facility in Livingston, Texas. Requirements

  • High school diploma or equivalent
  • Technical training in food service operations
  • Four (4) years of experience in food service operations, three (3) of which must be in a supervisory capacity
  • Valid food handler’s permit required, if required by the state of Texas.
  • Valid driver’s license in the state of Texas with an acceptable driving record required, unless waived by management.
  • Successfully complete annual in-service training requirements and maintain appropriate facility clearance.

Nice To Haves

  • Knowledge of nutrition and methods of food cost effectiveness desired.
  • Experience in correctional institution food services preferred.

Responsibilities

  • Plan, coordinate and supervise the administrative and food service activities of the department.
  • Provide staff training, evaluate staff performance and recommend and implement department and personnel changes as approved by the deputy warden and coordinated with the manager, human resources prior to implementation.
  • Assist the finance manager in the preparation of the departmental budget; monitor and control all expenditures pertaining to the food service operations.
  • Assist in the development and implementation of new and revised policies and procedures affecting food services.
  • Provide appetizing, nutritious and realistically proportioned meals in a clean, comfortable environment.
  • Ensure quality of production and food purchase requirements. Maintain cost control to stay within budget limitation. Establish quantity of food to be prepared according to the menu and planned number of meals to be served.
  • Conduct inspections in the food service area according to standards and company policy. Constantly maintain cleanliness and sanitation to standards including local health department regulations.
  • Supervise food service staff to ensure they are maintaining oversight of detainee workers. Maintain security in the department with the assistance of the staff.
  • Supervise preparation of food services for special facility functions.
  • Prepare daily schedule, assign specific duties to staff and detainees.
  • Maintain working relationship with unit staff and administrators concerning food services in the unit including but not limited to special functions.
  • Promote the development of positive social skills through modeling appropriate behaviors and intervening when inappropriate behaviors are observed. Provide regular feedback to staff regarding social skills procedures and intervention techniques.
  • Maintain accountability of staff, detainees and property; adhere to safety practices.
  • Regular attendance required.
