About The Position

The Food Service Manager 5 (FSM5) at Clallam Bay Corrections Center is responsible for overseeing the food service operations within a correctional facility. This role involves managing staff and incarcerated individuals in the preparation of approximately 80,000 meals monthly, ensuring compliance with health and safety standards, and maintaining the quality of food service. The FSM5 plays a crucial role in creating a safe and humane environment while contributing to the overall mission of improving public safety through effective food service management.

Requirements

• Senior level experience in food service management.
• Minimum of 2 years of relevant experience.

Responsibilities

• Plan, direct and supervise the work of the Food Service Department staff.
• Establish and prioritize performance expectations for staff utilizing core correctional practices.
• Monitor work performance, investigate and take appropriate corrective or recommend disciplinary action.
• Participate in the recruitment process and submit recommendations to hire temporary or permanent staff.
• Direct the security and accountability of incarcerated individuals assigned to the Food Services Department.
• Prepare weekly facility menus ensuring compliance with HQ menu and nutritional standards.
• Direct and monitor meal preparation and delivery, ensuring protocols are followed.
• Monitor and ensure all health, safety and sanitation standards associated with Food Service are consistent with local, county, state and federal guidelines.
• Prepare, monitor and analyze food cost summaries and reports.
• Purchase food service products in accordance with menu compliance and purchasing guidelines.
• Assist with the development and implementation of new or updated DOC policies, operational memorandums and facility rules and procedures related to Food Service.
• Participate as a member of the management team through committees, investigations and meetings.
