About The Position

The Food Safety and Quality Assurance Technician at Bobak Sausage Company is responsible for ensuring that all ingredients, finished products, and packaging meet food safety and quality standards. This role involves working closely with production and shipping departments to enhance processes, conducting quality control checks, and ensuring compliance with Good Manufacturing Practices (GMPs) and Hazard Analysis Critical Control Points (HACCP) procedures.

Requirements

  • Associate's degree in food safety, microbiology, or related field, or two years of related job experience.
  • Fluency in English, both written and spoken.
  • Basic mathematical skills.
  • Ability to solve practical problems and interpret various instructions.
  • Proficiency in Microsoft Applications.
  • Ability to work with small instruments and equipment for measurements or readings.
  • SQF Certification preferred.

Nice To Haves

  • Experience in a manufacturing environment (1 year preferred).

Responsibilities

  • Responsible for all levels of quality control/quality assurance.
  • Works closely with the production and shipping departments to improve processes.
  • Follows training processes including GMPS, SSOP, Food Safety, and others.
  • Identifies, develops, and secures alternative raw materials.
  • Responsible for meeting all critical control points and HACCP paperwork.
  • Collaborates with production, USDA, Sanitation, and Maintenance to correct deficiencies.
  • Schedules sensory, samples, and other daily tasks.
  • Assists production supervisors in maintaining compliance with GMPs and HACCP procedures.
  • Evaluates product weight, temperature, length, width, and records on net weight log.
  • Supervises production employees to ensure adherence to company GMPs.
  • Performs metal detector verification every two hours.
  • Sanitizes tools, knives, and personal thermometers as part of lab duties.
  • Calibrates personal thermometers, scales, pH meters, and oxygen analyzers.
  • Conducts quick swabs, brine samples, air samples, and tests raw and finished product fat and water samples.
  • Monitors Pre-Op and Operational Sanitation compliance and records deviations.
