About The Position

Monitor budgets for loss prevention and accuracy. Responsible for the daily operations of kitchen and food preparations, providing a quality dining experience for all guests. Supervises, coordinates, and participates in activities of cooks and other kitchen personnel engaged in the preparation and presentation of meals for customers.

Requirements

  • Culinary School graduate preferred.
  • 7 – 10 years experience with developing menus, managing kitchen, catering plus expertise in developing and training staff.
  • MicroSoft Office literate.
  • Normal speech, hearing, and vision.
  • Reaching, lifting of 50 pounds (more with assistance). Walking and standing for extended periods of time.
  • Ability to work on several tasks simultaneously; maintain composure when dealing with stressful situations; absolute confidentiality required.

Responsibilities

  • Estimate food consumption, costs and requisitions or purchases supplies; store food and rotate food items.
  • Responsible for collaborating with the F&B Director in developing menus for Stonehenge/Banquets.
  • Confer with other personnel to plan menus and related activities such as dining room, bar, and banquet operations and nightly specials.
  • Price menus according to member affordability and budget guidelines.
  • Inspect food and food preparation to maintain quality standards and sanitation regulations, maintaining a 90%+ rating on health department inspections.
  • Through effective practices provide progressive training and mentoring to all kitchen staff.
  • Assist in the resolution of food quality and service complaints.
  • Review financial transactions and monitor budget to ensure efficient operation, and ensure expenditures stay within budget limitations.
  • Responsible to implement and maintain a cohesive team environment between front of house and back of house.
  • Continue improvement of standards through new policies and good operating procedures.
  • Work closely with the Director of Food & Beverage on ways to improve quality, service, and efficiency within Food and Beverage Operation.
  • Receive and examine food products and supplies to ensure quality and quantity meet established standards and specifications.   Responsible for accuracy and timely processing of all related invoices.
  • Select and develop recipes based on type of food to be prepared.
  • Maintain a clean and safe working environment to Serve-safe standards.
  • Monitor food and labor costs and keep within budget parameters.
  • Participate in the sales of banquet functions, i.e., weddings, reunions, conference and meeting groups as requested.
  • Develop and maintain logistics for off-site catering at the Community Center.
  • Conduct monthly safety meetings.
  • Follow all FGCC safety programs, safety guidelines, policies and procedures. Wear, use and enforce all FGCC personal protection equipment (PPE) as needed on specific jobs and tasks.
  • Be aware of chemical safety and be familiar with all pertinent Safety Data Sheets (SDS) of chemicals which are used in the workplace.
  • Follow all FGCC safety rules including all local, state and federal regulations as they pertain to work at FGCC.
