Job Responsibilities As a Food, Beverage & Culinary Operations Support Manager you will assist the Food, Beverage and Culinary operations with stabilization support during leadership transitions, staffing shortages, openings, acquisitions and/or crisis situations to ensure continuity of operations. Your specific duties in this role will include:

Requirements

  • 2 to 4 years related experience in culinary or related professional area; Bachelor's degree (B. A.) or equivalent from four-year college or university; or equivalent combination of education and experience.
  • Solid organizational, time-management and prioritization skills

Responsibilities

  • Assist the Culinary and Food & Beverage operations during the absence of management or team members. (Executive Chef, Sous Chef, F&B Managers, Restaurant Manager and other personnel)
  • Travel to all properties as assigned, including weekends, evenings, holidays and out-of-state travel, with flexibility and the ability to travel on short notice.
  • Act as an extension of the corporate office in managing and ensuring high standards of service, offerings, and quality.
  • Provide written updates, action plans and end-of-assignment reports to leadership outlining property needs, progress and recommendations.
  • Support and reinforce DelMonte Hotel Group policies, procedures, culture, and training initiatives, implementing and educating teams accordingly while on assignment.
  • Develop, implement, and train teams on supporting operational tools and resources; including standard operating procedures (SOPs), recipe and menu costing sheets, inventory, ordering templates, production schedules and training materials.
  • Direct, train and mentor associates, assigning duties and observing performance to ensure policy and standard compliance.
  • Write and develop menus, feature offerings, usage records, quality standards and presentation standards in coordination with the Food & Beverage Team.
  • Monitor, analyze and manage food and labor cost performance, providing analysis and recommendations to ensure budget adherence and financial efficiency.
  • Monitor purchasing and receiving procedures, including food & beverage inventories, to ensure proper quantity, quality and price.
  • Research new products and operational approaches and provide analysis of cost, profit benefits and best practices.
  • Perform administrative tasks including maintaining inventory, processing payroll and supporting accounting and purchasing functions.
  • Ensure compliance with legal requirements including wage and hour laws and federal, state and local regulations.
  • Ensure compliance with food safety and handling policies, including proper temperatures and use dates.
  • Ensure appearance, upkeep and cleanliness of operational departments while on assignment.
  • Prepare and cook food to standards while monitoring production by associates, coordinating catering event details with management and appropriate staff, ensuring advance prep work and opening/closing procedures are completed according to checklists, and assisting at any kitchen station as needed.
  • Maintain effective departmental communication through logs, pre-shifts and required meetings
  • Ensure all owner and brand initiatives and programs are implemented and supported.
  • Assist in checking all fixtures, equipment and conditions (lights, music, heating/cooling, furniture, wallpaper, etc.) for proper operations, settings and maintenance, report deficiencies.
  • Develop and maintain positive business relationships with all guests, vendors and other external partners.
  • Maintain up to date records and files.
  • Assist in the supervision of associates at assigned hotels and departments. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities may include interviewing, hiring, and training associates; planning, assigning, and directing work; appraising performance; rewarding and disciplining associates; addressing complaints and resolving problems.
