About The Position

The Food & Beverage Manager is a key leadership role responsible for supporting the strategic, operational, and financial success of all food and beverage venues. This position partners closely with the Director of Food & Beverage to oversee daily operations, ensure consistent execution of AAA Four Diamond service standards, and drive continuous improvement across multiple outlets. In addition, this position plays an active role in special projects and department-wide initiatives focused on product and service development, guest experience enhancement, system implementation, and process optimization. These initiatives may include the rollout of new food and beverage programs, service standards, operating procedures, technology platforms, training frameworks, and revenue-driving strategies that support the long-terms objectives of maintaining our top ranked position within the market. The Food & Beverage Manager leads with a hands-on, service-driven approach while maintaining strong financial discipline, cross-functional collaboration, and a commitment to team member development. All responsibilities are performed in accordance with company policies, internal controls, regulatory requirements, and established brand standards.

Requirements

  • Minimum of seven (7) years’ experience in high volume, multi-outlet Food & Beverage operation, preferably within a casino resort or AAA Four Diamond property.
  • High School diploma or equivalent required; Bachelor’s degree in Hospitality Management, Business Administration, or related field preferred.
  • Proven involvement in project development, renovations, new outlet openings, or operational improvement initiatives strongly preferred.
  • Strong financial acumen with experience interpreting P&L statements, labor models, and operational forecasts.
  • Ability to communicate effectively with Guests, Team Members, and Management in both written and verbal form.
  • Must be proficient in computer applications including Microsoft Word, Excel, PowerPoint, Outlook, and point-of-sale software.
  • Understand basic functions with ordering and requisitioning software.
  • Must be certified and maintain a current California state approved Responsible Beverage Service (RBS) certificate.
  • Must be certified and maintain a current ServSafe Food Manager certificate.
  • Ability to work a flexible schedule including weekends, nights, and holidays.
  • Must be at least 21 years of age.
  • Must be able to obtain UAIC Tribal Gaming License.

Responsibilities

  • Practice, support, and promote Thunder Valley Casino Resort’s “ELITE” company-wide service mission and demonstrate AAA Four Diamond service standards at all times.
  • Initiate creative programs seeking collective enthusiasm in new project development efforts, including food and beverage menu development, new and current menu engineering, seasonal promotions, equipment upgrades, and process design that enhance Team Member and Guest experience.
  • Promote and champion a hospitality-driven environment focused on Guest satisfaction, quality assurance, and brand integrity.
  • Assist in post-implementation reviews to ensure projects meet operational, financial, and service expectations on a regular basis.
  • Support concept development, operational flow design, staffing models, and opening timelines for new and renovated programs.
  • Partner with culinary, beverage, and other departments to promote and deliver a seamless transition and Guest experience.
  • Take a leadership role in initiating and supporting new concept developments.
  • Identify new strategic revenue opportunities while evaluating current product and programs that have not met the threshold for continuation.
  • Ensure all food and beverage venues operate successfully in conjunction with gaming, health, sanitation, and established policies and procedures.
  • Monitor quality control of products and services to ensure excellent and consistent presentation that meets or exceeds Thunder Valley’s AAA Four Diamond standards.
  • Responsible to ensure all operations to follow safety and health guidelines.
  • Communicate and partner with department heads in the food services, beverage services, and other departments as needed to support new project development proposals that aim to elevate Guest service and properties position within the market.
  • Responsible for supervising the training of new and current hourly and supervisory Team Members.
  • Participate in the Team Member hiring, onboarding, and scheduling processes.
  • Responsible for periodic performance evaluations of subordinate management levels, followed with praise, coaching, and direction.
  • Utilize a mentoring and coaching style of management in training and developing Team Members.
  • Lead by example with being visible and available to both external and internal Guests.
  • Ensure follow up of proper documentation of attendance, discipline, incidents, and schedules, meeting notes, reports and any other related material in a timely manner using the appropriate forms provided.
  • Maintain a working knowledge of all equipment operation and maintenance including, but not limited to point-of-sale (POS) systems, requisitioning software, liquor dispensing equipment, soda dispensing equipment, beer systems, and payroll and accounting systems.
  • Maintain a comprehensive knowledge of products offered including wine and spirits, food recipes, prices, presentation, internal control procedures, and all company and department policies.
  • Evaluate equipment, stock levels, labor, and business volume forecasting, taking appropriate actions to ensure all areas are prepared and in working order.
  • Monitor comment cards, and respond to Guest service concerns and Team Member issues with appropriate documentation and follow up.
  • Participate in the creation of business plan objectives, budgeting and planning, and review of P&L statements to ensure successful financial performance of the Food & Beverage Division.
  • Maintains confidentiality of all privileged and confidential information.
