About The Position

Under the direction of the Fine Dining Assistant General Manager, the Fine Dining Bartender is responsible for beverage execution at the highest level in the Fine Dining Restaurant. This includes executing specialty cocktails and themed beverages including beer, wine, and spirits. In addition, the bartender maintains a clean and organized bar at all times. The bartender will assist with wine service and bar operations for the fine dining restaurant. The Fine Dining bartender will be responsible for food and beverage service for patrons sitting at the bar and in the lounge. The Fine Dining bartender must be highly skilled in cocktail execution and be fully knowledgeable of all cocktails, spirits, beer, and wine offerings of the specialty restaurant. The Fine Dining bartender must be able to perform duties in all casino and resort outlets as designated by business demands. Will maintain the highest level of service standards at all times to provide the best dining experience in the area. Our team will demonstrate and promote our We-Ko-Pa-Way Service Culture at all times.

Requirements

  • Three years in an a la carte restaurant as a fine-dining bartender
  • Extensive beer, liquor, and wine knowledge
  • Level 1 wine certification from the Court of Master Sommeliers is preferred
  • Level 1 Certified Beer Server from the Cicerone program preferred
  • Ability to execute high-end cocktails in a timely fashion
  • Strong communication skills and passion for hospitality
  • Self-motivated with attention to detail
  • Knowledge of beverage operations preferred
  • 4-diamond resort or casino experience preferred

Responsibilities

  • Responsible for executing specialty cocktails for the restaurant and bar daily
  • Execute all opening and closing side work including preparing and or ordering all bar garnishes, freshly squeezed juices, bar supplies, mixers, and all other requirements based on restaurant brand standards
  • Assist in cocktail development, beer and wine program, and upselling standards
  • Assist the Sommelier and Assistant General Manager to maintain efficiency, accuracy, and printing requirements of all Fine Dining wine lists, and bar lists for all venues
  • Maintain the cleanliness of the bar, bar coolers, and counter with a dedication to deep cleaning and front-of-house sanitation
  • Ensure consistency in the quality of all cocktails, wine, and beer for all guest orders
  • Assist in maintaining daily inventory and maintain accurate on-hand product and ingredients for all beer, wine, spirits, and cocktail lists
  • Fully knowledgeable of all restaurant menus, ingredients, allergens, and presentations
  • Maintain a unique and cutting-edge inventory of liquor, wine, and spirits
  • Assist to create cocktail recipe image books and brand bar standards
  • Address any food, beverage or service-related guest issues and utilize creativity and resources available to maintain optimum satisfaction
  • Work on the floor 80% of the time with a 'hands-on' mentality for guest service
  • Knowledgeable of all health department standards
  • Receive and have a current Food Handlers Card at all times
  • Complete the Management Title IV training through Human Resources
  • Complete and maintain DRAM certification or another state-recognized training institution for alcohol safety
  • Complete and follow all restaurant-specific training and SOPs
  • Assist in banquet and catering events for the department
  • Ensure restaurant menus are accurate and free of debris
  • Perform other related duties as required by the department
  • Follow all health and safety guidelines to ensure 100% compliance
  • Able to lift more than 50 pounds and push or pull 100
  • Obtain and maintain State/Tribal License (including extensive background check)
  • Pass a pre-employment drug test
