SUMMARY: The Expeditor is a crucial role between the kitchen and dining room, ensuring every dish leaves the pass with flawless precision. This role demands the analytical skills, ensuring quality standards are met in every dish. By delivering impeccable service, the In-Room Dining Server will uphold La Bahia Hotel & Spa’s service standards (inspired by Forbes) while elevating our beachfront property. Requirements

  • (3) years of experience as a fine dining expo, luxury hotel and/or resort preferred
  • Ability to be standing and walking long periods of time
  • Multilingual abilities highly preferred
  • Capable of maintaining composure during peak hours
  • Comfortable in varying lighting conditions
  • Fluent in Kitchen terminology and POS mods
  • Capability to push, carry, and lift service carts and trays (Up to 25-50 lbs)
  • Flexible to work in different shifts, including early morning, weekends, and holidays
  • Highly organized with the ability to multitask in a fast-paced environment
  • Ability to work independently and in a team environment

Responsibilities

  • Inspect every component of dishes per hour against: visual perfection, temperature standards, and architectural integrity
  • Initiate recook protocols at the first sign of imperfection
  • Balance VIP orders against general dining flow
  • Annotate tickets with chef's codes (rush, allergy, and VIP assigned notes)
  • Monitor Kitchen Display System with 99.9% order accuracy
  • Lead pre-service briefings on 86'd items and specials
  • Document consistency issues in daily pass logs (shared with EC)
  • Enforce "silent kitchen" protocols during critical service periods
  • Supervise china selection (weighted plates for steak, translucent for seafood)
  • Verify custom plating for VIP guests
  • Oversee truffle shavings/gold leaf applications
  • Conduct line checks against mise en place photos
  • Assist in food running when necessary
  • Maintain impeccable grooming standards, wearing the assigned uniform exactly as specified (proper fit, cleanliness, and presentation at all times. Wear the official hotel lapel pin prominently as part of the uniform requirement, unless embroidered onto uniform.
  • Perform all other duties that may be assigned as needed by your manager.
