Job Summary and Objectives: The Expeditor role ensures quality and proper presentation of food in a timely manner; that food orders are prepared and assembled quickly according to member specifications. The expeditor must also ensure that the line is always stocked, neat, clean, and within food code regulations. Reads tickets, pulls product from window in order specified on ticket, calls side items and any special instructions, coordinates and communicates with line cooks. Confirms proper placement and presentation of product, side items and any special instructions, changes plates and/or wipes excess fluids from plate and garnishes, places order in expo window in proper order according to computer ticket. Always maintain an awareness of lead ticket time. Maintain line in a clean, sanitary, and safe manner. Uniforms and aprons should always be “showplace clean.” Maintain personal health and sanitation standards (wash hands when using restroom, etc.). Proficient in knowing and safely producing (to standards) great expediting times (8-10 minutes at lunch; 10-12 minutes at dinner). The Food Runner is responsible for quickly and accurately delivering orders from the kitchen to the diners, supporting Servers with their needs, and assisting with maintaining a clean environment for members and guests throughout their dining experience. These responsibilities are combined into one role. Individuals in this role are cross-trained in each responsibility and job assignments will rotate between them. Delivers food orders to diners quickly and accurately. Ensures diners have everything they need on the table before delivery of food. Upholds sanitation and food safety principles. Removes dirty dishes from the table, once everyone is done eating. Assists with setting up tables by placing appropriate tableware, eating utensils, decorations, and napkins. Communicates effectively and courteously with members, guests, and team members. Promotes an atmosphere of teamwork by assisting co-workers.
