About The Position

The Executive Steward manages the daily kitchen utility operations and staff at the Gaylord Pacific Resort & Convention Center. This role is responsible for overseeing dish room operations, night cleaning, back dock cleaning and maintenance, banquet plating, and food running. The Executive Steward supervises kitchen employees not directly involved in cooking, aiming to enhance guest and employee satisfaction while adhering to the operating budget.

Requirements

  • High school diploma or GED with 4 years of experience in procurement, food and beverage, culinary, or related area.
  • OR a 2-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major with 2 years of experience in procurement, food and beverage, culinary, or related area.

Responsibilities

  • Manage daily kitchen utility operations and staff.
  • Oversee dish room operations, night cleaning, and back dock cleaning.
  • Supervise kitchen employees not engaged in cooking, such as dishwashers and kitchen helpers.
  • Order and manage necessary supplies for kitchen operations.
  • Schedule events, programs, and activities, as well as the work of others.
  • Conduct inventories of china, glass, and silver.
  • Control inventories of food, equipment, smallware, and liquor, reporting shortages as necessary.
  • Inspect supplies, equipment, and work areas to ensure efficient service and compliance with standards.
  • Investigate employee accidents and follow up as needed.
  • Enforce proper cleaning routines for serviceware and equipment.
  • Ensure compliance with food handling and sanitation standards.
  • Communicate relevant information to executives, peers, and subordinates in a timely manner.
  • Lead and manage kitchen team, providing direction and support.
  • Achieve and exceed performance and budget goals.
  • Solicit employee feedback to improve service performance.
