Starting Salary : $66,000 annually Summary : Assist the Executive Chef in the daily operations of the kitchen, including menu development, inventory, and purchasing of supplies, and cost control. Oversee the activities of the kitchen staff and monitor food production and presentation in the absence of the Executive Chef.
Requirements
- Must be able to pass and maintain a Tier 5 FBI Security Clearance required.
- College or culinary training or extensive cooking and production experience required.
- 3 to 5 years progressive professional cooking experience required.
- A minimum of 2 years working in management required.
- SafeServe certification required.
- Strong interest in training and coaching.
- Ability to fill-in for any kitchen position.
- Commitment to quality service, and food and beverage knowledge.
- Understanding of proper use and maintenance of major kitchen equipment, including stoves and refrigeration.
Nice To Haves
- Culinary experience in a hotel or banquet hall preferred.
Responsibilities
- Prepare daily production list.
- Prepare quality products in support of meal production requirements in quantities according to menu and number of persons to be served following standardized recipes.
- Verify that kitchen staff follows all recipes and portions servings correctly.
- Keep kitchen, dish, and storage areas clean and organized.
- Place food and supply orders as directed.
- Assist in hiring and training employees according to company standards.
- Set excellent customer service and work examples.
- Manage staffing levels throughout shift.
- Oversee kitchen labor and food cost to budgetary requirements.
- Perform other responsibilities as assigned.
