The Executive Restaurant Chef is responsible for leading the kitchen management team and overseeing daily operations of the Food and Beverage outlet kitchen. This includes managing food preparation, ensuring restaurant and kitchen sanitation, and maintaining daily inventory. The Executive Chef will manage the performance and daily activities of the culinary staff, ensuring that all food production areas provide food items that are prepared and presented according to established standards. This role requires executing the strategic plan, which includes forecasting, budget management, profit and loss accountability, cost control, and inventory management. The Executive Chef will also be responsible for managing all phases of food purchasing, receiving, and cost control, while partnering with Senior Management to develop special menus and presentations. In addition to operational responsibilities, the Executive Chef will create cost cards, recipe cards, and photos for use during taste presentations. The role involves ensuring compliance with Hazard Analysis and Critical Control Points (HACCP), Occupational Health and Safety Administration (OSHA), and sanitation guidelines. The Executive Chef will also perform cooking shows for guest audiences and collaborate with restaurant leadership to market the Food and Beverage outlet. A strong knowledge of food and beverage trends within the hospitality industry is essential, as is the ability to interact with guests and Sales Managers to promote guest satisfaction. The Executive Chef will provide direction for menu development, monitor the quality of raw and cooked food products, and ensure that food handling and sanitation standards are met. This position also emphasizes exceptional customer service, requiring the Executive Chef to manage day-to-day operations, respond to guest feedback, and empower employees to deliver excellent service. Human resources activities, such as interviewing, selecting, and training employees, are also part of the role, along with conducting performance appraisals and monitoring employee attendance.
