Purpose of position The Executive Pastry Chef leads the creation of refined pastries and desserts across all outlets, ensuring top-tier quality and presentation. Focused on culinary innovation, this role stays ahead of industry trends, delivering unique guest experiences. A mentor to the pastry team, the Executive Pastry Chef, collaborates with all departments to enhance service while upholding food safety and luxury hospitality standards.

Requirements

  • Minimum 10 years of pastry experience across all areas of pastry
  • Leadership experience in luxury hospitality, preferably Forbes-rated or equivalent
  • Strong communication, organizational, and team-building skills
  • Innovative, detail-oriented, and quality-conscious
  • Awareness of current trends in pastry and dessert presentation
  • Proven ability to manage operations, costs, and team development
  • Flexibility to accommodate business needs, including varying schedules
  • Legal authorization to work in the United States

Responsibilities

  • Lead, train, and mentor pastry team members, fostering collaboration, innovation, and continuous improvement.
  • Design and execute high-quality, refined pastry and dessert menus across all outlets, aligning with seasonal trends and guest preferences.
  • Develop and manage departmental budgets to ensure cost-effective operations while maintaining high-quality standards.
  • Monitor food costs, labor expenses, and waste to optimize profitability.
  • Oversee daily ordering, inventory management, and cost control practices to maintain stock levels and align procurement with budgetary constraints.
  • Maintain high standards of product quality, presentation, and consistency, ensuring dishes exceed guest expectations and comply with internal standards.
  • Ensure strict adherence to food safety protocols, sanitation guidelines, and regulatory standards, including health authority and Forbes ratings.
  • Foster strong working relationships with other departments, particularly food and beverage, to ensure smooth communication and efficient operations.
  • Conduct daily line checks, quality assessments, and departmental meetings to ensure smooth pastry operation.
  • Support the career development of pastry team members through regular performance reviews, coaching, and training.
  • Maintain a clean, organized, and fully functional kitchen environment in compliance with safety and operational standards.
  • Contribute to long-term strategies for the pastry department, including seasonal offerings, guest engagement, and operational improvements.
  • Collaborate with the banquet team to design and execute pastry offerings for large events, meeting high presentation, flavor, and quality standards.
  • Oversee pastry production for banquets, weddings, and special events, managing preparation, timing, and delivery in a high-volume environment.
  • Coordinate with event planners to tailor dessert menus for specific events, considering guest preferences and dietary restrictions.
  • Monitor the pastry department’s performance during banquet operations, troubleshooting issues and ensuring timely service during large events.
  • Ensure all banquet-related pastry offerings are delivered to established standards of quality and presentation.
  • Create specialty items such as afternoon tea pastries, in-room amenities, holiday/seasonal promotions, and VIP/custom guest requests.
  • Actively engage in guest-facing opportunities, including pastry demonstrations, tastings, and exclusive events, to elevate the guest experience while reinforcing the hotel's brand identity.
  • Collaborate closely with the Executive Chef to ensure that all pastry offerings are consistent with the hotel’s overarching culinary vision and quality standards.
  • Maintain comprehensive recipe documentation, standard operating procedures, and training materials to ensure consistency, operational efficiency, and excellence across all shifts and dining outlets.
  • Perform other reasonable duties as assigned by management
