About The Position

The Executive Director of Food and Beverage is responsible for overseeing and managing all aspects of the food and beverage operations at the property level. This includes front of house, back of house, stewarding, banquets, beverage service, and all dining outlets. The Executive Director ensures the delivery of high-quality guest experiences, achievement of financial goals, and adherence to brand standards, while providing strong leadership to department managers and staff. This role reports directly to the Corporate Vice President of Food & Beverage and works closely with property leadership to align with Seneca Gaming Corporation’s policies, procedures, and objectives.

Requirements

  • Must be 18 years of age or older upon employment.
  • Bachelor’s degree in Business, Hospitality, Food Service Management, or equivalent work experience required; advanced degree preferred; Relevant certifications desirable.
  • Minimum of 10 years of progressive leadership experience in food and beverage management required, with at least three (3) of those years in a department manager role.
  • Proven experience managing multi-outlet property operations including restaurants, banquets, and beverage programs.
  • Solid financial management skills including budgeting, forecasting, and cost control.
  • Experience with menu development, costing, and operational analysis.
  • Strong people leadership skills with demonstrated ability to recruit, train, and develop managers and staff.
  • Knowledge of regulatory compliance, health and safety standards, and internal control requirements.
  • Excellent communication and guest service skills with a focus on operational execution.
  • Proficiency in basic business software and property management systems.
  • Must possess and maintain a valid driver’s license with a safe driving record acceptable to the Corporation’s insurance carrier.
  • Ability to write routine correspondence and to speak effectively to the public, employees and patrons
  • Must possess excellent communication skills.
  • Must have the ability to deal effectively and interact well with the patrons and employees.
  • Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner.
  • Must be able to stand, walk, and move through all areas of the casino for long periods of time.
  • Maintain physical stamina and proper mental attitude to work under pressure in a fast-paced, casino environment and effectively deal with customers, management, employees, and members of the business community in all situations.

Responsibilities

  • Executes on the food and beverage strategy at the property level
  • Lead daily operations of all property food and beverage outlets, ensuring efficiency, profitability, and superior guest service.
  • Supervise and provide leadership to property F&B management staff including Restaurant Managers, Executive Chef, Beverage Manager, Catering/Banquet leadership, and Stewarding.
  • Implement guest service standards and measure progress to ensure food & beverage is delivering on the brand promise.
  • Develop and monitor property-level KPIs, budgets, and forecasts; ensure financial goals are achieved through effective cost control and revenue generation.
  • Ensure consistency in menu offerings, and presentation across all outlets in alignment with SGC brand expectations.
  • Collaborate with property leadership and corporate teams on marketing initiatives, promotions, and special events to enhance revenue and guest engagement.
  • Maintain compliance with health, safety, hygiene, and regulatory requirements, as well as company policies and internal controls.
  • Support new outlet openings, renovations, and capital projects at the property, ensuring readiness and adherence to brand standards.
  • Recruit, train, develop, and evaluate property-level F&B staff; foster a culture of accountability, teamwork, and continuous improvement.
  • Monitor labor costs, scheduling, and staffing levels to balance guest service needs with operational efficiency.
  • Conduct regular performance reviews of managers and supervisors, providing coaching and guidance to drive results.
  • Stay current on industry trends, menu development, and guest preferences to ensure property offerings remain competitive.
  • Act as the property liaison with other departments to ensure smooth communication and alignment across the resort/casino operation.
  • Represent the Food & Beverage department at property and community meetings as required.
  • Perform other duties as assigned.
  • Serve as a role model and leader for property F&B staff by exemplifying SGC’s mission, vision, and values.
  • Actively develop enrolled Seneca Nation members for leadership positions within the department.
  • Maintain visibility throughout the property to engage with guests and employees.
  • Ensure departmental policies and procedures are documented, communicated, and consistently followed.
  • Support property compliance with GITCA, TERO, and all corporate and regulatory requirements.
  • Maintain strong professional relationships within the industry to share best practices and recruit talent.
  • Ensure effective recruitment, training, coaching, recognition, and disciplinary actions as needed.
  • Actively monitor guest feedback and take corrective action to continuously improve service.
  • Support a 24/7 operation with the flexibility to work extended hours, nights, weekends, and holidays as required.
