About The Position

The Executive Chef position at Reef Capital Partners offers an exciting opportunity to lead the culinary operations of a growing restaurant group in Park City, Utah, an internationally renowned ski destination. This role is pivotal as it involves overseeing the pre-opening development and operations of three new concepts: a 100-seat brasserie and bar, a high-end chef's degustation concept, and a French pastry & coffee shop. The Executive Chef will work closely with the Head Operating Team and the Food & Beverage Director to ensure that all culinary and related operations meet the highest standards of quality and service. In the pre-opening phase, the Executive Chef will provide input on kitchen design, research and budget for kitchen equipment, establish vendor agreements, and collaborate with the Executive Team to re-forecast the opening budget. The role also includes leading menu development for various dining periods, setting standards for kitchen operations, and creating training programs for kitchen staff. The Executive Chef will be actively involved in the hiring process for managers and kitchen staff, ensuring that the team is well-prepared for a successful launch. Once the restaurants are open, the Executive Chef will be responsible for maintaining quality controls of food execution, taste, and presentation. This includes routine checks of food and beverage quality, achieving labor and cost of goods sold (COGS) controls, and ensuring compliance with all regulatory requirements for food handling and sanitation. The Executive Chef will also work to discover new vendor partnerships and oversee the implementation of new menu changes, ensuring that the kitchen operates smoothly and efficiently.
