About The Position

The Executive Chef of Purchasing is responsible for the sourcing, purchasing and receiving of products CPU/Catering production. This role reports to the CPU Campus Executive Chef and partners with Production teams and directs team members involved in receiving, warehousing, and issuing products for production and events. This position contributes to the planning of production and manages all operational tasks relevant to the stores and procurement department including ordering systems, waste management best practices, culinary excellence quality controls, food safety SSOPs and associated safety protocols utilizing the company and GPAK purchasing and receiving guidelines. The Purchasing Manager role adheres to the established budgetary and financial KPIs guidelines set by the company. Able to work in a fast-paced environment and prioritize tasks to meet deadlines.

Requirements

  • Has a minimum of 5 years similar work experience in large food production, stadium, hotel, or large manufacturing purchasing environment

Responsibilities

  • Collaboration and partnership with vendor relations team to identify vendors for CPU/Catering
  • Build and leverage market lists for business units to ensure efficient cost-effective procurement of goods across departments.
  • Help develop par and safety stock systems based on current and historical data
  • Implement sound purchasing policies, systems and procedures in accordance with Compass standards.
  • Monitor vendors for quality, service, and price through standard purchasing specifications.
  • Develop an integrated internal requisition system in partnership with the production team to be used on a weekly basis, arranging delivery of those items.
  • Ensures that all authorized or approved purchase orders are sent to their respective suppliers/vendors for delivery purposes on a regular basis.
  • Develop and establish Minimum / Maximum stock levels in collaboration with the Executive Production Manager, Production Manager, and General Manager.
  • Approves all additional requests for new storeroom items, checking correct item description, unit, packing, category and establishing Min/Max estimated stock levels.
  • Verify the 'pending orders' report on a daily basis, and all pending orders are checked and verified regularly.
  • Ensures validity of items available, identifies and addresses obsolete items and follows up on action taken for disposal.
  • Approves all storeroom re-order requests, verifying quantities within the established Min/Max stock levels.
  • Responsible for all administrative functions of the Stores Materials Department, staffing, training, and execution of other related duties.
  • Responsible for physical control of all store items until issued, fully documented under strict control procedures
  • Responsible for maintaining logical storeroom inventory levels operationally needed.
  • Spot checks storeroom requests if properly maintained, verifies quantity requested and issued, proper items received by signatories & ID availability.
  • Ensures that the GPAK/Catering follow the SOP for Food Safety in regard to Receiving, Storing and Issuing.
  • Maintains all documents, files and listings up-to-date and performs his duties in the most efficient manner, and audit preparation
  • Implement daily quality checks on goods following GPAK/Catering specific standards.
  • Comply with allergen management and label validation protocol.
  • Willing to work on a flexible schedule to accomplish all major responsibilities and tasks.
  • Ensures all sector and Compass employee guidelines are implemented and adhered to
  • Promotes a culture of Food and Workplace Safety
  • Partner with the culinary team to monitor and mitigate waste.
  • Treats everyone with professionalism, care, and respect.
  • Communicates with our Partner honestly, accurately and in a timely manner
  • Develop in-depth expertise in the set up and usage of the ordering systems as directed by the company
  • Perform with accuracy and in a timely fashion all the material accounting processes: POs coordination, invoice reconciling, inventory counts
