About The Position

The Executive Chef at Morrison Living is a dynamic leader responsible for overseeing daily kitchen operations, including recruiting, training, and food preparation. This role emphasizes culinary excellence and aims to enhance resident, employee, and client satisfaction while managing financial performance. The Executive Chef will actively participate in food production, menu development, and ensure compliance with safety and sanitation standards, all while empowering the onsite staff to deliver exceptional service.

Requirements

  • A.S. or equivalent experience.
  • Minimum 5 years of progressive culinary/kitchen management experience.
  • Extensive catering experience is a plus.
  • Experience in high volume, complex foodservice operations is highly desirable.
  • Hands-on chef experience is a must.
  • Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
  • Experience with Microsoft Office (Word, Excel, PowerPoint), Outlook, and the Internet.
  • Willingness to participate in client satisfaction programs/activities.
  • ServSafe certification is highly desirable.

Responsibilities

  • Lead daily culinary production and ensure food quality and presentation.
  • Determine food presentation and create decorative food displays.
  • Provide direction on menu development based on product availability.
  • Seek out sources for fresh food and monitor produce and meat for freshness.
  • Maintain product consistency by conducting inspections of seasonings, portion, and appearance of food.
  • Research customer preferences and develop a menu incorporating local foods and flavors.
  • Prepare and cook foods for regular and special events.
  • Demonstrate new cooking techniques and equipment to staff.
  • Supervise and coordinate activities of cooks and food preparation workers.
  • Ensure compliance with health, safety, and sanitation standards.
  • Provide guidance and direction to subordinates, setting performance standards and monitoring performance.
  • Communicate the importance of safety procedures and ensure employee understanding of safety codes.
  • Monitor the quality of raw and cooked food products to ensure standards are met.
  • Follow and enforce food safety and sanitation guidelines.
  • Maintain purchasing, receiving, and food storage standards.
  • Participate in the development and implementation of business strategies for the community.
  • Manage department controllable expenses including food cost and supplies.
  • Develop and implement guidelines for purchasing and receiving areas.
  • Analyze financial and operational information to adjust business plans and operating costs.
  • Develop, implement, and manage the department's budget, monitoring labor and food costs.
  • Identify major revenue and expense opportunities and possible problems.
  • Control food cost, labor, and other expenses; monitor actual versus budgeted expenses.
  • Oversee food inventory, purchasing, control, and disbursement of food supplies.
  • Schedule staff based on forecasted volumes.
  • Create 100% resident satisfaction by providing team members with training and resources.
  • Engage with residents and community staff with a professional attitude and appearance.
  • Improve service by assisting individuals to understand guest needs and providing feedback.
  • Empower employees to provide excellent customer service and establish guidelines for expectations.
  • Ensure employees provide genuine hospitality and teamwork.
  • Seek opportunities to improve customer experience through resident feedback.
  • Review resident satisfaction results to identify areas of improvement.
  • Respond to and handle guest problems and complaints.
  • Lead team member meetings and establish performance and budget goals.
  • Solicit employee feedback and address employee problems or concerns.
  • Develop strategies that support team member engagement and treat employees fairly.
  • Provide necessary training and tools for team members to perform their duties.
  • Communicate performance expectations and provide ongoing feedback to team members.
  • Provide coaching and counseling to achieve performance objectives.
