Requirements

  • Associate’s degree in culinary arts or equivalent experience.
  • 5+ years of progressive culinary/kitchen management experience.
  • Extensive catering experience is a plus.
  • Experience in high-volume, complex foodservice operations.
  • Institutional and batch cooking experience.
  • Hands-on chef experience is essential.
  • Strong knowledge of food and catering trends, sanitation, cost control, and presentation.
  • Proficiency in Microsoft Office (Word, Excel, PowerPoint), Outlook, and internet tools.
  • Willingness to participate in client satisfaction initiatives.
  • ServSafe certification is highly desirable.

Responsibilities

  • Plan and execute regular and modified menus in accordance with established guidelines.
  • Follow standardized recipes, portioning, and presentation standards.
  • Complete and utilize daily production worksheets and waste logs.
  • Taste and evaluate meals to ensure quality and consistency.
  • Train kitchen staff in food preparation, equipment use, food safety, and sanitation.
  • Maintain cleaning and maintenance schedules for all kitchen areas and equipment.
  • Manage inventory of food and supplies to meet operational needs within budget.
  • Make decisions on the utilization of leftover food products per company guidelines.
  • Ensure compliance with federal, state, and local health regulations and sanitation standards.
  • Adhere to safety policies and procedures, including incident reporting.
  • Participate in departmental meetings, staff development, and professional training.
