About The Position

The Executive Chef 2 at Sodexo Campus Services will lead culinary operations at Clarkson University, focusing on high-end catering and hockey concessions. This role involves menu planning, program execution, and staff management, ensuring culinary excellence and adherence to Sodexo standards.

Responsibilities

• Directly manage retail and catering chefs, as well as the purchasing and catering manager.
• Maintain chef/manager schedules and cover as needed.
• Conduct yearly evaluations and set goals for chefs and managers using Ingenium.
• Implement and standardize culinary systems and procedures for catering, retail menus, and other culinary operations.
• Monitor, audit, and standardize new menus.
• Ensure food and physical safety and conduct annual training for hourly associates.
• Create action plans based on audit findings and maintain GC audit books.
• Work with vendors on procurement and manage purchasing financial audits.
• Continue sustainability programs under the direction of the Director of Culinary Operations.
• Conduct yearly culinary foundations training for all cooks.
• Guide chefs towards ACF certification with support from the Director of Culinary Operations.
• Enhance and standardize catering and banquet services, creating menus based on client needs.
• Implement innovative ideas in retail, catering, and dining services.
