About The Position

The position involves working in the evisceration department of a poultry processing facility. Employees must be, or become, Peco Sorter Certified. The line speed is set at 155, and the weight of the birds ranges from 9 1/2 pounds to 11 1/2 pounds. The primary responsibility of sorters is to ensure that the birds are properly opened from the back up ventor to the opener, and that the viscera has been completely removed. Additionally, sorters are tasked with identifying any defects in the birds during the sorting process. Final sorters are responsible for assessing every fourth bird for fecal contamination and other defects. Sorters will rotate responsibilities, which may include using a knife to remove drums with synovitis and major bruising, as well as wings that exhibit bruising and other defects. It is important to note that personnel who use scissors on the back up ventor/opener do not need to be sorter certified, but all employees from the maestro down the line must hold sorter certification.
