This role represents hotel management during overnight hours, providing leadership, direction, and support across all departments to ensure a seamless guest and colleague experience. Grand Hyatt DFW is seeking an exceptional Director of Restaurants & Bars to lead our multi-outlet Food & Beverage operations. This role oversees our high-volume restaurant, lounge, and in-room dining concepts-ensuring a refined, contemporary dining experience aligned with the Grand Hyatt brand.

Requirements

  • 5 years of progressive Food & Beverage leadership with multi-outlet oversight
  • Experience in a high-volume luxury hotel or resort environment
  • Demonstrated success managing complex operations including restaurants and in-room dining
  • Strong financial acumen and knowledge of labor management and brand standards
  • Dynamic communicator with executive presence and cross-functional influence
  • Composed, confident leader who thrives under pressure
  • Hands-on manager who leads by example and builds strong relationships
  • Collaborative partner to culinary, rooms, and events teams
  • Deep understanding of luxury service expectations and experiential dining trends

Nice To Haves

  • Bachelor's degree in Hospitality Management or equivalent experience preferred

Responsibilities

  • Set the vision and long-term strategy for multiple F&B venues.
  • Partner with outlet leaders to meet service, financial, and operational goals.
  • Ensure each outlet reflects Grand Hyatt's sophisticated and worldly brand essence.
  • Drive consistent, elevated guest experiences across all dining touchpoints.
  • Uphold rigorous standards in cleanliness, safety, and brand compliance.
  • Improve workflows, labor planning, and systems to enhance performance.
  • Lead, coach, and mentor outlet managers and supervisors.
  • Build a culture of accountability, engagement, and high performance.
  • Be a visible, hands-on leader on the floor-especially during peak periods.
  • Anticipate guest needs and deliver thoughtful, personalized service.
  • Elevate service rituals and luxury touchpoints to enhance satisfaction.
  • Address guest concerns with empathy, professionalism, and poise.
  • Collaborate with culinary and marketing partners on menu evolution and campaigns.
  • Stay ahead of dining, mixology, and service trends to keep offerings fresh.
  • Drive creative programming that elevates brand positioning and revenue.
  • Lead P&L management, budgeting, forecasting, and performance analysis.
  • Use analytics to identify trends, refine pricing, and optimize margins.
  • Maintain strong cost controls, effective labor strategies, and inventory discipline.
