About The Position

The Director of Food and Beverage is responsible for overseeing all aspects of food and beverage operations at Lanier Islands, ensuring compliance with corporate standards while maximizing guest satisfaction. This role requires a hands-on approach to managing costs, including payroll, food and beverage costs, and inventory levels. The Director will participate in executive meetings and stay informed about industry trends to develop innovative menu ideas that cater to the local market. Collaboration with the Executive Chef is essential to create balanced and appealing food and beverage selections. The Director will also work closely with the marketing team to develop effective advertising and public relations strategies for food and beverage offerings. In addition to menu development, the Director will focus on proactive sales activities within the Catering Department, analyzing catering business performance to identify high-need periods. Budgeting and forecasting will be a key responsibility, requiring close collaboration with the General Manager and Director of Finance. The Director will enforce high standards of hygiene and sanitation, ensuring safety and accident prevention measures are in place. Regular tasting of food and providing constructive feedback to the Chef will be part of the role, as well as identifying training needs and implementing training programs for staff. The Director will lead all Food and Beverage staff across the hotel, outlets, and catering services, setting high standards for service and practices to enhance the guest experience. Proficiency in MICROS/Simphony POS and Microsoft Office products is required to effectively manage operations and reporting.
