About The Position

Why We Need Your Talents: The Director of Culinary is responsible for leading the management and operational effectiveness of the Casino’s dining outlets and banquets from a culinary perspective. This position is tasked with the innovation and development of quality menu items and their presentation, increased sales, market share, menu costing and menu profitability; while at the same time maintaining the various brand standards. Additional responsibilities include long and short term operational planning, talent development, and budget planning and performance. Achieving these goals will require coordination with a cross-functional team that includes Front of House Operations, Purchasing, Surveillance, Facilities, Player Development, Catering, Human Resources, Training and Finance. This position will report to the Vice President of Food and Beverage.

Requirements

  • Minimum eight (8) years of Director of Culinary/Executive Chef experience overseeing a multi-venue operation (7-10 outlets minimum)
  • Must be able to obtain and maintain the appropriate license as required by the Maryland Lottery and Gaming Control Agency.
  • Ability to work long hours.
  • Ability to stand for long periods of times without sitting or leaning.
  • Ability to climb stairs multiple times daily.
  • Ability to handle multi-tasking-heavy work-exerting up to 50 pounds of force occasionally, and up to 30 pounds of force frequently or constantly to lift, carry, push, pull, or otherwise move objects.
  • Ability to climb, bend, stretch, twist or reach with your body and arms.
  • Ability to work under variable temperatures and noise levels.

Nice To Haves

  • Four (4) Year Culinary degree preferred
  • Casino & High Volume experience preferred

Responsibilities

  • Provide leadership of the culinary department through supervision of the Chef D’ Cuisine level to insure high quality production, meeting of brand standards and provide a cohesive team environment. At times, assists with front line duties as needed
  • Responsible for all aspects of financial performance, COGS, and proper inventory controls for Culinary Operation across all outlets
  • Review scheduling procedures and job descriptions/specifications for department staff, including establishing quantity and quality output standards, including presentation and quality of product
  • Ensure that standard operating procedures for revenue and cost controls are in place and effective, including managing labor, physical food equipment, inventories, accurate pars, and loss prevention
  • Manage vendor relationships
  • For each outlet develop a long-term menu strategy that is congruent with each brands position- includes current operations and possible future opportunities
  • Responsible for implementation, follow-through and closure of menu development, testing, implementation (to include concept consumer panels, creative showings, financial showing, field testing) for the purpose of maximizing menu offerings
  • Develop talent through mentorship, coaching and setting the example, will be required to conduct trainings
  • Responsible for continuous product and menu improvement, enhancement of new and existing items and the development of short-term promotional offerings
  • Responsible for all food product tasting
  • Ensuring compliance with local, state and federal agencies
  • Participation in high level financial meetings
  • Support media opportunities (photo/television)
