Join us as the Director of Beverage to join our Food and Beverage team. The Beverage Director is responsible for the strategic leadership, financial performance, and operational execution of all beverage programs across OKANA Resort, including waterpark bars, resort lounges, concessions, restaurants, entertainment venues, and special event operations. This role ensures consistency, profitability, compliance, and exceptional guest experience across a high-volume, multi-concept resort environment. The Beverage Director serves as the subject-matter expert and operational leader for all beverage-related initiatives. The Director of Beverage provides strategic direction through planning, budgeting, labor management, and cost control while partnering closely with culinary and resort leadership to enhance offerings and maximize revenue opportunities. This position also focuses on team development, mentoring supervisors and bartending staff, and fostering a culture of Pyramid Global, accountability, and high performance. The Director of Beverage plays a key role in shaping the beverage identity of OKANA Resort, supporting innovative programming, ensuring compliance with company standards, and contributing to an energetic and guest-focused environment that reflects the resort’s commitment to excellence.

Requirements

  • Bachelor’s degree or minimum 2 years’ experience in food and beverage management.
  • Previous experience in high volume multi-unit restaurants and bars environment.
  • Leadership skills coach & mentor the service team.
  • Knowledge of financial reports; ability to develop strategies that support business objectives.
  • Sound time management skills.
  • Read, write and speak English fluently; clear & concise communication skills
  • Ability to train employees in alcohol intervention, food handling, customer service and sanitation certifications.
  • Have or will acquire all required food & beverage certifications.

Responsibilities

  • Resort-Wide Beverage Leadership: Provide executive oversight of all beverage operations across waterpark outlets, resort bars, lounges, restaurants, and event venues Establish and maintain standardized beverage programs, SOPs, recipes, and service standards Partner with Culinary, Operations, Marketing, Finance, and Purchasing teams to align beverage strategy with overall resort objectives Support new outlet openings, seasonal concepts, and special event activations
  • Financial Performance & Cost Control: Own beverage P&L performance, including revenue, cost of goods, labor efficiency, and margin optimization Develop and manage annual beverage budgets, forecasts, and financial targets Analyze sales trends, product mix, and profitability to drive menu engineering and pricing decisions Implement strong inventory controls, variance tracking, and loss-prevention strategies
  • Menu Development & Program Innovation: Lead development of cocktail, spirits, beer, wine, and non-alcoholic beverage programs Design high-volume, operationally efficient beverage menus for waterpark and entertainment venues Introduce seasonal offerings, promotions, and experiential beverage concepts aligned with the OKANA brand Ensure accurate recipe execution, yield control, and product consistency
  • Inventory, Purchasing & Vendor Management: Oversee beverage purchasing, receiving, storage, and inventory systems across all outlets Partner with approved vendors and suppliers to negotiate pricing, contracts, and incentives Ensure accurate product specifications, ordering par levels, and inventory turnover Maintain compliance with all federal, state, and local alcohol regulations
  • People Leadership & Development: Recruit, train, coach, and develop Managers, Supervisors, and bar leadership teams Establish clear performance expectations, accountability standards, and succession plans Lead beverage training programs focused on service excellence, product knowledge, and cost awareness Collaborate with Human Resources on staffing strategies, performance management, and corrective action
  • Quality, Safety & Compliance: Ensure responsible alcohol service, safety, sanitation, and brand standards are consistently met Conduct regular audits, outlet inspections, and operational reviews Maintain a safe, organized, and efficient work environment Act as an internal and external ambassador for OKANA Resort’s beverage programs
